We think this is the best Texas chili recipe and the internet seems to agree. In this recipe, we use the flat of a brisket for creating tender morsels of chili meat that doesn't come out tasting like pot roast.
This recipe is in the style of Texas barbecue restaurants and is a chili recipe with no beans.
It's a bit like a chile con carne recipe, but we slowly simmer these chunks of beef until they are one solid soup. In fact, you might find that using an immersion blender after the chili cooking gives you even more of a Texas quality chili. Just buzz it a few times to make it extra broken up and mixed well. :)
Ingredients Used:
• 4 slices thick cut bacon
• 3-4 lb. beef brisket, trimmed
• Kosher salt, pepper, onion powder – for liberally sprinkling on the meat while browning.
• 2 c. white onion, small diced (one large onion)
• 5 garlic cloves, pressed through a garlic press
• 1 T paprika
• 1 T. cumin powder
• 3 ½ T Texas chili powder, such as Mexene or Gebhardt’s
• ½ t. dried thyme
• ½ t. chipotle chile powder
• ½ t. salt
• 1 quart beef broth
• ½ c. strong black coffee (you can save this from your morning coffee)
• 28 oz. can whole tomatoes, in juice

Low Calorie High Protein Chili Recipe with Ground Beef
This low calorie chili recipe is high in protein and nutrients and it is a great way for enjoying chili even if you are in cutting phase - and you'll never know the difference. It is that good! By adding vegetables you are adding volume to your food and what is most important you are not sacrificing flavor.
You can add vegetables of your choice - they do not have to be the exact ones that I happened to have in my fridge ;)
Low Calorie Chili ingredients:
- 4 slices of bacon
- 16 oz ground beef 85/15 or lower
- can black beans (or whichever you prefer, or mix and match)
- 3 Zucchini
- 4 medium Red Bell Peppers
- 1 -2 onions
- 4-5 garlic cloves
- 1 can (793 g) whole tomatoes
- 1.5 cup frozen corn
- 1 or 2 Jalapenos
- 2 tbs cumin
- 2 tbs chili powder
- 2 tbs sweet paprika
- 2 tbs sea salt (not table salt - if you are using table salt adjust to your taste: table salt is much saltier than sea salt or kosher salt)
- fresh black pepper
TIPS:
- seasoning with salt and pepper every layer of veggies you add will develop better flavor
- once you add veggies make sure you have medium high to high heat so they do not boil - you want them to brown a bit
- Make sure you are using good quality thick bottom pot like dutch oven or cast iron pot.
- I use bacon to render fat for frying veggies, I do not add any additional oil - you can if you wish.
- This recipe will be much better if made a day ahead

INGREDIENTS
2 lbs (32 oz) Lean Ground Beef 96/4 or 93/7
2 cans (910 grams) Kidney Beans
2 cans (861 grams) Diced Tomato
1 can ( 455 grams) Black Beans
2 cups (300 grams) Green Bell Pepper
1 cup ( 150 grams) Red Onion
Spices
1 Tbsp Chili Powder
1 Tsp Chili Flakes
1 Tbsp Garlic Powder
1 Tbsp Cumin Powder
1/2 Tbsp Black Pepper
1/2 Tbsp Salt Or to taste
INSTRUCTIONS
In a large saucepan add the 2 pounds of Lean Ground Beef and cook till brown.
After Lean Ground Beef is cooked add Beef to the Slow Cooker (Crock Pot).
Next and the following ingredients: diced tomatoes, kidney beans, black beans, green bell pepper, and red onion.
Now its time to add the spices: chili powder, chili flakes, garlic powder, cumin, black pepper, and salt.
Mix all ingredients together and cover the slow cooker.
Turn on the slow cooker and set it to high for 4 hours or low for 8 hours. This is up to you.
After 4 hours on high, stir the chili around and taste to see if it needs more salt
Let it cool down and add it to your favorite meal prep containers.
