1 c Fresh mushrooms 3/4 lb Calves liver, 1/4 c French salad dressing -Minced parsley For 30 minutes marinate mushrooms in dressing. Drain. Reserve marinade. Brush liver on both sides with marinade. Place on broiler pan. Broil 3 minutes; turn, top with mushrooms and broil 3-4 minutes longer. Garnish with parsley.

Chicken liver with pomegranate molasses - كبدة الدجاج مع دبس الرمان
The recipe serves 4 portions
Ingredients: 500 g chicken liver ( you can use beef or lamb liver) 3 tbsp. (45 ml) Olive oil 1/3 cup spring onion 3 cloves garlic 1 pod chili ( mild) salt& black pepper to taste 1/2 teaspoon cinnamon powder 1/2 teaspoon paprika 1 teaspoon coriander powder 100 ml of pomegranate molasses (50-70 ml of water if the molasses is thick)
Method: 1. In a big frying pan over high heat add olive oil and drained chicken liver. 2. Stir for few minutes till the liquid will be evaporated, lower the heat to a medium-low. 3. Add the spring onion, than garlic and chili, saute for few minutes. 4. Add salt& black pepper and the rest of spices. 5. Add pomegranate molasses ( if molasses is thick add little of water) bring it to a boil, cover and let it simmer for a couple of minutes.
Garnish with mint, parsley, pomegranate seeds or nuts, serve it with arabic pita bread.
