Garlic Cream Sauce for Ravioli
Here I'll show you how to spruce up a packet of store bought ravioli with this dreamy, creamy garlic sauce! Chris x
Garlic Cream Sauce for Ravioli | Serves 3-4
FULL RECIPE POST:
INGREDIENTS
1lb / 500g Ravioli (see notes)
1 1/4 cups / 300ml Heavy/Double Cream, at room temp
1/3 cup / 80ml Chicken Stock
1/3 cup / 80ml Dry White Wine
1/3 cup / 30g freshly grated Parmesan, plus more to serve
2.5 tbsp Butter, preferably unsalted
1 small bulb of Garlic
1 heaped tbsp finely diced Fresh Parsley, plus extra to serve
1/8 - 1/4 tsp Ground Nutmeg
Salt & Black Pepper, to taste
Olive Oil, as needed
METHOD
Roast Garlic: Slice the tip off the garlic bulb to expose all the cloves. Drizzle with olive oil then wrap in foil and place in the oven at 180C/356F for 45-60mins, or until knife tender, golden brown and caramelized. Don't be tempted to whack up the temp, low and slow is the aim of the game. Leave for a few minutes to cool down, then peel away the outer layers. Squeeze out as much as you can, making sure the outer peel doesn't mix in. Sprinkle over a pinch of salt then mash with a fork to smooth out any lumpy parts.
Brown Butter (optional step - see notes): Melt 2.5 tbsp butter into a large pan over medium heat. It will begin to foam, just keep gently stirring until the butter starts turning from a lemony yellow to a light brown. After a few more mins the butter will turn a deeper brown colour and will release a nutty aroma. This is when your butter is properly browned. If at any point the nutty aroma smells more like burning, then simply reduce the heat. For speedy option just simply melt butter.
Sauce: Add roasted garlic to pan and stir to combine with the butter for 30 seconds. Pour in wine and simmer for 2-3mins to reduce by at least half (important or the sauce will be too sour). Pour in chicken stock and cream, then add parsley, nutmeg and a pinch of salt & pepper. Simmer for 5 or so mins until the sauce starts to thicken, then mix in parmesan. The sauce should be fairly thick by this point.
Ravioli: Cook ravioli in salted boiling water according to packet instruction. Use a slotted spoon to add the cooked ravioli to the sauce and stir to combine. The excess water will loosen up the sauce.
Serve: Plate up with extra parmesan/parsley (optional)

Mushroom Bourbon Cream Pasta

Cook the mushrooms in butter and olive oil.
Sauté the shallots and garlic.
Stir in bourbon and heavy cream.
Add thyme and then cooked noodles.
Remove from the heat and slowly add butter.

Ingredients:
-Lemon juice 1 tbs
-Falak Paprika powder ½ tsp
-Falak Black pepper fine ground ½ tsp
-Falak Garlic powder ¼ tsp
-Falak Pink salt ½ tsp or to taste
-Chicken fillet 200g
-Cooking oil 1 tbs
-Shimla mirch (Capsicum) julienne 1 medium
-Corn kernels boiled ¼ Cup
-Makhan (Butter) 2 tbs
-Lehsan (Garlic) chopped 2 tbs
-Maida (All-purpose flour) 2 tbs
-Doodh (Milk) 2 Cups
-Cream ¼ Cup
-Falak Garlic powder ½ tsp
-Falak Black pepper fine ground ½ tsp
-Falak oregano leaves ½ tsp
-Falak Pink salt ½ tsp or to taste
-Dried parsley ½ tsp
-Fusilli pasta boiled 200g
-Hara pyaz (Green onion) leaves
Directions:
-In a bowl,add lemon juice,paprika powder,black pepper powder,garlic powder,pink salt & mix well.
-Add chicken fillet & mix well,cover & marinate for 15 minutes.
-In a frying pan,add cooking oil,marinated fillet & cook on low flame until done (5-6 minutes each side).
-Let it cool then cut into cubes with help of knife & set aside.
-In the same frying pan,add capsicum,corn kernels,sauté for 1-2 minutes & set aside for later use.
-In a wok,add butter & let it melt.
-Add garlic & sauté for a minute.
-Add all-purpose flour & mix well.
-Add milk,whisk well & cook until it thickens.
-On low flame,add cream & mix well.
-Add garlic powder,black pepper powder,oregano leaves,pink salt,dried parsley & mix well.
-Add boiled pasta & give it a good mix.
-Now add sauteed vegetables,cooked chicken & mix well.
-Garnish with green onion leaves,red chilli & serve!

-Chicken fillet dal ker ache tarhan mix karein aur dhak ker 15 minute kliya marinate ker lein.
-Frying pan mein cooking oil aur marinated chicken dal dein aur halki ancch per paka lein (5-6 minutes each side).
-Thanda ker lein aur knife ki madad sa cubes mein cut ker lein & side per rakh dein.
-Us he frying pan mein shimla mirch & corn kernels dal ker 1-2 minutes kliya sauté ker lein & bad mein use kernay kliya side per rakh dein.
-Karahi mein makhan dal ker melt ker lein.
-Lehsan dal ker ek minute kliya sauté karein.
-Maida dal ker ache tarhan mix ker lein.
-Doodh dal ker ache tarhan whisk karein aur garha ho janay tak paka lein.
-Halki ancch per cream dal ker ache tarhan mix ker lein.
-Lehsan powder,kali mirch powder,oregano leaves,pink salt & dried parsley dal ker ache tarhan mix ker lein.
-Boiled pasta dal ker ache tarhan mix karein.
-Ab sauteed vegetables & cooked chicken dal ker ache tarhan mix ker lein.
-Hara pyaz leaves aur lal mirch sa garnish ker ka serve karein!
