How To make Linguine "Deliziose"
1 lb Linguine
1 lb Prawns, medium, cleaned
deveined 1 lb Salmon, filet, fresh,
:
julienned coarsely Flour 3/4 c Oil, olive
1 c Leeks, julienned
6 oz Mushrooms, sliced
1/2 c Wine, white
1 tb Marjoram
1 tb Parsley, chopped
2 md Garlic, cloves, minced
Salt Pepper 2 tb Butter (optional)
1 c Broth, chicken
Boil linguine according to the package instructions or make it fresh. Cool under cold running water and set aside. Flour the prawns and salmon lightly. In a large saute pan, heat the olive oil over high heat, then add the prawns and salmon and saute for 1 minute. Add the leeks and mushrooms (one at a time), and saute for 1 minute after each addition. Next, add wine, marjoram, parsley, garlic, salt, pepper, and butter. Saute lightly for 1 minutes. Add broth, lower heat and simmer for 2 minutes, adding more broth if the mixture becomes too dry. Add the drained linguine and mix well, then simmer for 1 minute. To serve, place linguine on a plate first, decorate with prawns, then pour the remaining sauce over both. Garnish with parsley. Penne alla vodka was a very popular dish in the 80’s and 90’s and while it’s a little hard to track the true origin, one thing is for sure, it has been completely transformed outside of Italy so my aim is to bring it back to its roots! This creamy pasta dish is my Mums recipe with a small tweak from me – do you think this dish deserves a comeback on Italian menus? Try my authentic version for the OG and let me know what you think – and yes, for once I use CREAM! Ever noticed how many more ingredients are often in a fake recipe? ???????? INGREDIENTI (per 4 persone)
✅ 1 kg di cozze
✅ 500 g di linguine
✅ 5 zucchine piccole
✅ aglio q.b.
✅ basilico q.b.
✅ olio evo q.b.
✅ prezzemolo q.b.
???? PROCEDIMENTO:
✳️ Tagliate una zucchina a rondelle più o meno della stessa dimensione e friggetele in abbondante olio extravergine d’oliva per qualche secondo, finché non saranno croccanti e dorate.
✳️ Tagliate le restanti zucchine grossolanamente e lasciatele sbollentare per circa 7/8 minuti in acqua leggermente salata.
✳️ Frullate le zucchine appena lessate, aggiungendo qualche foglia di basilico, un filo d’olio e due mestoli d’acqua di cottura della pasta, dovrete ottenere una crema abbastanza liquida.
✳️ Fate soffriggere uno spicchio d’aglio, dei gambi di prezzemolo e del peperoncino, aggiungete le cozze e sfumate con un mestolo d’acqua, lasciate che si aprano, sgusciatele e filtrate il loro liquido.
✳️ Cuocete le l’inguine in abbondante acqua, anche non salata, scolate la pasta a metà cottura e finite di cuocerla in padella aggiungendo l’acqua delle cozze. Solo quando mancano due minuti alla fine aggiungete la crema di zucchine. Mantecate con un filo d’olio evo e aggiungete le cozze sgusciate.
