How To make Leprechaun Cookies 'N' Mint Cake
1 Hershey's cookies 'n' mint
Chocolate bar (7 oz.) /broken into pcs Few drops green food color (optional) 1 pk Yellow cake mix (with
-pudding in The mix) Cookies 'n' mint glaze -(recipe Follows) Recipe by: www.hersheys.com 1. Heat oven to 350 F. Grease and flour 12-cup fluted tube
pan. 2. Using food processor, chop candy bar pieces very finely;
set aside in small bowl. 3. Prepare cake mix batter as directed on package, using
water, vegetable oil and whole eggs. In small bowl, reserve 1-1/2 cups batter; stir into reserved chopped candy bar.
4. Into remaining vanilla batter, stir in food color, if
desired. Pour into prepared pan. Drop chocolate batter by spoonfuls into center of batter, about 1-inch in from each side of tube. 5. Bake 35 to 40 minutes or until wooden pick inserted
comes out clean. Cool 10 minutes; remove from pan, inverting onto wire rack. Cool completely. Top with COOKIES 'N' MINT GLAZE, if desired. 12 to 16 servings. COOKIES 'N' MINT GLAZE: In small microwave-safe bowl, unwrap and break 1 HERSHEY'S Cookies 'n' Mint Chocolate Bar (7 oz.) into pieces; add 1 teaspoon shortening (not butter, margarine or oil). Microwave at HIGH (100%) 45 seconds. OREO MINT CHOCOLATE ICE CREAM PIE
INGREDIENTS
1 1/2 cups Oreo cookie crumbs
2 tablespoons butter, melted
1 1/2 quarts mint chocolate chip ice cream, softened
DIRECTIONS
Pulse the cookie crumbs together with the melted butter until combined. The crumbs should stick together when pressed together. Use the bottom of a measuring cup to press the cookie crumbs into the bottom and onto the sides of a pie dish until molded. Gently press the softened ice cream into the prepared pie dish, being careful to not pull up the cookie crust on the bottom. Use a rubber spatula to gently press the ice cream in. Making sure the ice cream is softened enough also helps with this. You can also lightly stir and “cream” the ice cream before pressing it into the pie pan. Use the remaining Oreo cookies to evenly decorate around the rims of the pie dish. Pressing each cookie about quarter way into the softened ice cream. Freeze for at least 4 hours and up to 24 hours in advance. The pie can keep in the freezer for a couple days, but make sure to cover it with plastic wrap to prevent the taste of the freezer on the cookies. Allow to softened for 15-20 minutes prior to cutting and serving. Enjoy!
LUCKY CHARMS RICE KRISPIES
INGREDIENTS
1/3 cup butter
16-oz bag mini marshmallows
pinch of salt
5 1/2 cups Lucky Charms
DIRECTIONS
In a large pot over medium heat, melt the butter. Add the marshmallows and salt and stir with a rubber spatula, scraping down the sides to make sure the marshmallows do not burn. As soon as the marshmallows are melted, remove from the heat immediately. Add the Lucky Charms cereal, folding to coat the cereal completely. Spoon the mixture into the prepared pan, pressing down into an even layer. Place in the fridge to set for at least 20 minutes. Once set, use a sharp knife to cut the Rice Krispie treats into 12 rectangles.

RECIPE:
Mint Butter Spritz
1 cup (2 sticks) butter, softened (not melted) (I recommend Land O Lakes brand as I know it creams well. I have had trouble with some generic butters not creaming properly and making the dough hard to press.)
1/2 cup plus 1 tablespoon powdered sugar
2 teaspoons peppermint extract
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Green GEL food coloring
Preheat oven to 400°F.
Combine the flour, salt, and baking soda and set aside. Cream the butter very well with an electric mixer on its highest setting. Then add the powdered sugar and cream again until light and fluffy. Add the vanilla and mint extracts and mix thoroughly. Add the flour mixture and mix until all ingredients are evenly combined, but do not over-mix as that can make spritz dough too stiff. Add in green coloring.
Press onto cookie sheets using a consistent rhythm. If your dough isn’t pressing well, troubleshoot by adding flour (a tablespoon at a time) to overly soft or sticky dough, or water (a tablespoon at a time) to overly stiff dough.
Bake in a 400 degree oven for 6 to 10 minutes. Check early and often as spritz cookies brown quickly. Let sit 2 or 3 minutes and move to cooking rack. Makes about 70 cookies/35 sandwiches.
Chocolate Mint Sandwich Cookie Filling
4 Tablespoons butter flavor shortening
4 Tablespoons butter
1 cup plus 3 Tablespoons powdered sugar
2 Tablespoons plus 2 teaspoons unsweetened cocoa powder- add more or less to get a good thickness
1/2 teaspoon peppermint extract
Make the filling by creaming the butter and shortening by hand, just until it is smooth. Add the powdered sugar, cocoa powder and extract and keep stirring until completely blended. Keep mixing until you have a stiff cookie stuffing. Remember it’s not supposed to be thin like frosting for a cake, but thick like sandwich cookie filling. You’ll want a consistency you can either pipe on with a decorating bag or apply with a knife.
DECORATING: Use colored icing and decorating tips to add rainbow stripes of icing. Add gold sprinkles.

Double Chocolate Mint Chip Cookies (Made with a Cake Mix!)

We started with a dark chocolate cookie dough made from a cake mix, so they're extra fluffy! Then we mixed in a cup full of Andes mint baking pieces. The end result is a double chocolate cookie with little bursts of cool mint. They're amazing...and easy too!
