How To make Khvorost ( Fried Sugar Circles)
1 c Flour
3 tb Sugar
1 ts Cinnamon
1/4 ts Salt
1 Egg beaten to blend
2 1/2 tb Water
1 tb Vodka
1 ts Vanilla
Oil for deep frying Cinnamon sugar Apricot sauce ( see recipe) Combine flour, sugar, cinnamon and salt in medium bowl. Add egg, waer, vodka and vanilla and blend well. Turn dough out onot lighlty floured surface andknead 5 minutes. Cover and let rest fo r 15 minutes. Rll dough out on lightly floured surface to thickeness of 1/8 in. cut into strips. Cut small lengthwise slit neat 1 end of each strip. Twist opposite end of strip through opening, handling gently, to form loop. Heat oil in saucpan or deep fryer to 350. Fry loops in batchesuntil golden brown. Drain on paper towels. Sprinkle generously with cinnamon sugar. Serve immediately. Accompnay with Apricot sauce for dipping. Bon Appetit 4/83 -----

Hvorost - Fritozde kizartilmis ip ince hamurdan yapilan citir citir kurabiyeler
MALZEMELER:
2 yumurta + 1 yumurta sarisi (kalan yumurta akini buzlukta dondurup biriktirebilirsiniz ve daha sonra bununla beze yapabilirsiniz)
2 yemek kasigi votka (Votkayi kesinlikle ekleyeceksiniz diye bir sey yok! Ama onsuz kurabiyeler asiri CITIR CITIR olmayacaktir ! - Merak etmeyin kizartma sirasinda alkol uctugu icin kurabiyelerde votkadan eser kalmayacaktir)
1 yemek kasigi sivi krema
300 gr un
1/4 cay kasigi soda (kabartma tozu olmaz)
0,5 cay kasigi limon suyu
1 lt sivi yag
kurabiyelerin uzerine serpmek icin pudra sekeri
HAZIRLANISI:
1. Tel cirpici ile yumurta, votka ve sivi kremayi cirpiyoruz. Buraya kokusu alinmis soda ekliyoruz (Kokusunu almak icin: Sodanin uzerine limon suyu damlatalim kopurmeye baslayacaktir - sodanin kokusu boylece alinmis olacak - bu sodayi daha sonra karisimimiza ekliyoruz)
2. Karisimimiza unumuzu eliyoruz
3. Hamur sertlesmeye baslayacaktir bu adimda elle yogurmaya basliyoruz hamuru. Finalde COK sert bir hamur elde ediyoruz!
4. Tavaya yagimizi dokup kizdiralim
5. Hamurumuzdan kucuk parcalar kopartarak bu parcalari ince bir sekilde acalim ve actiktan sonra istediginiz sekli verebilirsiniz (acarken masayi unlamayin tam tersine yaglayin ki kizartirken kurabiyelerimiz yanmasin)
6. Kurabiyelerimizi yaga atip her iki tarafida altin sarisi renkte kizarana kadar kizartalim
7. Kizaran kurabiyelerimizi kagit havlu serili tabaga alip uzerindeki fazla yaglarin emilmesini saglayalim. Servis oncesi uzerine pudra sekeri serpebilirsiniz yada bal dokup servis edebilirsiniz

Хворост - это обжаренные во фритюре тонкие полоски из специального теста, это очень рассыпчатое хрустящее печенье
НАДО:
2 яйца + 1 желток (белок можете оставить заморозив его и потом из него сделать безэ)
2 ст л водки (водку добавлять необязательно! Но без нее хворост НЕ ПОЛУЧИТСЯ хрупким! - не переживайте, во время приготовления ВЕСЬ алкоголь выпарится и его полностью не останется в печенье)
1 ст л сливок
300 гр муки
1/4 ч л соды (разрыхлитель не подойдет)
0,5 ч л лимонного сока
1 л подсолнечного масла
сахарной пудры на обсыпку сверху печенья
