2 1/2 c Unbleached All Purpose Flour
3/4 ts Salt
1 lg Egg
3 tb Vegetable Oil
1/2 c Club Soda -- Or More If Needed
-, At Room Temperature 12 tb Unsalted (Sweet) Butter
- 1 1/2 Sticks, Melted
RED BEAN FILLING:

1 c Dried Red Beans -- Soaked
-Overnight In Water To Cover Salt And Plenty Of Freshly -Ground Black Pepper -- To -Taste 1/4 c Olive Oil
1 1/4 c Onions Finely Chopped
1/2 c Cilantro :
Finely Chopped
Sift the flour and salt into a large bowl and make a well in the middle. Pour in the egg, oil, and club soda and stir into the flour, adding more club soda if necessary, ot make a rather soft dough. Transfer the dough to a floured board and knead until smooth and elastic, about 10 minutes. Shape the dough into a ball, cover with a linen or cotton (not terry cloth) kitchen towel and let stand for 1 hour. Divide the dough into four parts and shape each one into a ball. Let stand, covered, for 15 minutes. Preheat the oven to 350 Degrees F. and butter two large baking sheets. On a floured surface, roll out one of the balls into an 1/8-inch thick square. Brush the dough with some of the melted butter Dip your fingers into the melted butter and pull the edges of the dough in different directions, stretching it evenly until it is almost transparently thin. Don't worry if the dough tears, as you will be folding it up. With a sharp knife, trim the edges of the dough to from an even square. Fold the square in half, brush the surface generously with the melted d fold in half again crosswise to from a smaller square. It should be approximately 6 to 7 inches. It is isn't, pull it out slightly to fit the dimensions. Brush the square with butter. Shape one-fourth of the filling into a ball and place in the center of the square. Fold in the corners of the square like an envelope. With the palm of your hand, flatten the pie so it is about 1 inch thick. Brush the top with melted butter and carefully transfer to a prepared baking sheet. Repeat the procedure with the rest of the dough and filling. Bake the pies in the middle of the oven, until golden brown, about 35 minutes. Serve warm. Makes 4 Pies for 8 Servings RED BEAN FILLING: Drain the beans and place them in a saucepan along with enough fresh water to cover by at least 2-inches. Bring to a boil and add salt, then reduce the heat to medium-low. Cook the beans, partially covered, until almost mushy, about 1 1/2 hours. While the beans are cooking, heat the oil in a medium size skillet, over medium heat, and add the onion to saute it. Stir occasionally, until dark brown, about 15 to 20 minutes. When the beans are done, drain well and mash. Add the sauteed onions and their cooking fat and the cilantro. Season generously with salt and freshly ground black pepper. Cool to room temperature. Makes enough filling for 4 pies.

During our recent trip in the Caucasus region, specifically in Georgia(country), Armenia and Russia, these are so famous that there are many variations of Georgian cheese bread that depend on the region and cook. Gaining popularity in American food cities like Los Angeles where there is a large population from Georgia’s neighboring country, Armenia. Khachapuri is a warm boat-shaped yeast bread stuffed with multiple different kinds of cheese and an egg in the center. My children loved this cheese bread so much that can be eaten from breakfast till dinner. :)
Here's what youll need:
2 ¼ cups al purpose flour or bread flour (300g)
1/2 cup whole milk (100g)
1/2 cup warm water (100g)
2 tablespoon sugar (15g)
2¼ teaspoon active dry yeast (11g)
1 teaspoon salt (5g)
2 tablespoon oil (15g)

cheddar 100g

❂ Ingredients:
1 Egg
2 Tsp of Sugar
1 Tsp Salt
30g. Butter (melted)
150g. warm Water
100g. warm Milk
500g. Flour
7g. dry active Yeast
For filling:
300g. Suluguni Chesse or (Queso Fresco)
400g. Brynza Chesse or ( Feta Chesse)
100g. Heavy Cream

❂ Cooking process:
⁃ Mix egg, sugar and salt. Then add softened butter, warm milk and warm water. Mix well until smooth.
⁃ Sift the flour into a bowl from the food processor and add dry yeast, mix with a spatula.
⁃ Pour the prepared liquid part into the flour and knead for about 8 minutes on a food processor. You can also knead by hand.
⁃ Roll the finished dough into a ball. Cover with foil and leave for 1.5 hours in a warm place (for example, you can put in the oven)
⁃ Mix the dough thoroughly, divide into 3 or 4 even halves and leave for another 10 minutes.
⁃ Grate and mix 2 types of cheese and add heavy cream.
⁃ Roll out the prepared pieceof dough in the shape of an oval on the board.
⁃ Wrap some cheese inside the edges of the Khachapuri on all sides, forming a ‘boat-shaped’ dough.
⁃ Fill the inside of the ‘boats’ with cheese to the brim.
⁃ Put in the oven for 20 minutes (390 °F)
⁃ Pull out them from oven, pour the yolks into the center of the Khachapuri and brush the edges with the egg mixture
⁃ Put in the oven for another 5 minutes (350 °F)
⁃ Brush with butter and Enjoy your own made Adjaruli

Georgian Cheese Stuffed Bread (Khachapuri)
Neither brunch nor pizza night will be the same when you try this khachapuri, the sensational cheese-stuffed Georgian bread with a runny yolk center!
INGREDIENTS
Dough:
100ml milk;
100ml water;
5g Dry yeast
1 tsp sugar;
1/2 tsp salt;
300g flour;
30ml sunflower oil.
Filling:
150g Hard cheese
150g Mozzarella
50ml milk;
salt to taste.
Also:
1 egg;
Butter;
2 eggs for the filling.
METHOD
Knead the dough. Leave on for 15 minutes.
Pour in sunflower oil and knead. Let rise 40 minutes.
Divide the dough into two parts. Roll out two balls and let rise again. Cook the filling. Make a flat cake with your hands and put the filling in it.
Twist in the form of a boat. Bake in the oven at 220C/430F for 15 minutes. Put an egg in the deepening of the baked boat and bake for 1 minute.

Первая ласточка в этом жанре, готовлю я нечасто, но с душой. Время от времени пеку хачапури.
Для 3 небольших хачапури вам нужно 2 яйца, около 600 грамм муки, стакан теплой воды, сахар, соль и сухие дрожжи. Также для начинки нужны два вида сыра – сулугуни и брынза (фета).
Дрожжи растворяются в теплой воде, добавляется сахар. Яйца смешиваются с мукой и водой, замешивается тесто, добавляется соль. Тесто должно подойти (1 час).
Сыр двух видом натирается на терке, к нему добавляется кусочек растопленного сливочного масла.
Из теста делаются две лепешки, на нижнюю кладется сыр (смесь), сверху накрываем второй лепешкой. Все руками раскатываеся, сверху присыпается сыром.
В духовку – выпекать при температуре 250 градусов.
