How To make Kc's Fruitcake Drops
1 c Sifted flour
1/4 ts Baking soda
1/4 ts Salt
1/2 ts Cinnamon
4 tb Butter (1/2 stick), softened
1/2 c Sugar
1 Egg, slightly beaten
2 tb Brandy, I like cherry
8 oz Dates, chopped & pitted
4 oz Candied red cherries, choppd
4 oz Candied mixed fruit, chopped
4 oz Candied pineapple, chopped
1/2 c Blanched almonds (opt)
1/2 c Brazil nuts (opt)
Or 1 c Walnuts, chopped
1. Sift flour, soda, salt and cinnamon together. 2.
Cream butter and sugar until fluffy light in medium size bowl, beat in eggs and brandy. 3. stir in flour mixture, half at a time, blending well to make a soft dough. Stir in the remainer of the ingredients, mixing to coat everything. 4. Drop batter, a rounded teaspoon full at a time, 1 " apart onto a lightly greased cookie sheet. 5. Bake at 350 degrees for 12 minutes or until firm and lightly browned. 6. When cool, store in an air tight container. These cookie dry out quickly and get hard otherwise.

Bánh lọt lá dứa nước dừa là món ăn thân quen hầu như của tất cả mọi người.. Nhớ ngày còn nhỏ đi học giờ ra chơi là chạy ùa ra ăn một ly bánh lọt nước cốt dừa thêm hạt lựu, ôi chao nó ngon làm sao! Bánh lọt thơm mùi lá dứa và dẻo dẻo dai dai khi ăn, quyện cùng nước cốt dừa béo đậm đà... Xa quê hương đã lâu nhưng những món ăn dân dã ngày còn nhỏ cứ in sâu vào trong tâm khảm... nhớ da diết những món ăn Việt Nam chứa đựng bao nhiêu tuổi thơ đầy kỷ niệm!... Giờ đây ngồi nhớ nhà, nhớ quê hương, mình vào bếp làm bánh lọt lá dứa vừa ăn vừa ôn lại những ngày xưa thân ái!...hihi..
7 lá dứa xây với 1.5cup nước = 375ml (1 cup = 250ml)
Quậy nước lá dứa với 1/3 cup bột năng (33gr) + 2/3 cup bột đậu xanh (70gr)
2.5cups nước nấu sôi và cho nước bột lá dứa vào từ từ nấu đến khi nó trong veo, khoảng 2- 3 phút với lửa nhỏ, nếu không trong nghĩa là không đủ nước

Macaron Cake is very different from a regular cake and it can be adapted to different flavours and fillings. It is best to be prepared a day in advance as it needs time to soften the macaron disks before serving.
Ingredient
For Macaron
Almond flour - 140 g
Icing sugar - 130 g
Egg white - 100 g (2 Egg white)
Salt - 1/4 tsp
Caster sugar - 100 g
Vanilla extract- 1/4 tsp
Gel food colouring
For Raspberry Filling
Raspberry - 1 cup
Icing sugar - 1/2 cup
Corn starch - 1 tbsp
Water - 1/4 cup
For Butter Cream
Butter - 200 g
Icing sugar - 1 cup
Vanilla extract - 1 tsp
For Decoration
Strawberry - 1/2 cup
Crushed pistachio - 2 tbsp
