How To make Jim Jams
2 c Oatmeal
2 c Flour
1 c Brown sugar
1/2 c Lard
1/2 c Butter
1/2 ts Soda
1/2 c Buttermilk*
FILLING 1 lb Dates
Water 1/2 c Sugar** or use orange juice
*or 1/2 tb lemon juice and fill up to 1/2 cup mark with milk. Mix all ingredients. Chill well. Roll thin, spread half with date filling. Cover with other half. Cut into small rectangles and bake on oiled cookie sheet. Bake at 375F about 10 min. OR cut circles about 3 inches across, put a bit of filling in the middle and fold over. OR cut small circles and put filling on one and cover with another. Strawberry jam makes a tasty filling. FILLING: Cook 1 pound of dates with small quantity of water and 1/2 cup sugar. (**Or use orange rind and orange juice and omit sugar.) Chill. Source: Abigail Breadner Shaw's handwritten cookbook with suggestions from her granddaughter. Jim Jam Biscuit Recipe:
For the biscuit:
Butter - ½ Cup (110 gms)
Sugar - ¼ Cup + 1 tbsp (75 gms)
Vanilla essence - ¼ tsp
Milk - 1 tbsp
Maida - 1 Cup (100 gms)
Corn Starch - 2 tbsp
Salt - A Pinch
Baking Powder - A Pinch
For the cream:
Butter - 2 tbsp (30 gms)
Milk - 1 tbsp
Vanilla essence - ¼ tsp
Sugar (powdered/ icing) - ½ Cup
For the jam:
Strawberry/ Mixed Fruit Jam - 2 tbsp
Sugar - For garnish
Instructions:
For the cookies:
1. Whisk soft butter, sugar and the vanilla essence until it is pale, soft, and fluffy.
2. Add some milk and whisk well to combine.
3. Add the maida, salt, baking powder, and cornstarch and mix well to bring together the dough, do not whisk. Fold together until the dough is uniform.
4. Wrap the dough in plastic wrap and refrigerate for 30 mins.
5. Place it inbetween paper/ butter paper and roll out to 1 cm thickness.
6. Use a cookie cutter to cut the desired shape cookies, and cut out an even number.
7. On half the cookies, cut out a smaller circle.
8. Use a knife to make the characteristic indent shape if desired and a few holes with a skewer on the base piece.
9. Place then on a parchment paper and bake in a preheated oven at 180c for 10-12 mins, until light golden brown.
10. Allow the cookies to cool fully.
For the cream:
1. Whisk the butter until soft, add the milk and vanilla essence. Add the powdered sugar and whisk until a smooth and thick cream is obtained.
2. Fill this mixture into a piping bag.
For the Jam:
1. In another piping bag, take some mixed fruit/ strawberry jam and mash it to make it smooth and in piping consistency.
To assemble:
1. On the base cookies, pipe some of the vanilla cream mixture, leaving an indent in the centre. Fill this gap with the jam and place the top piece on top, press gently. Sprinkle some sugar on the jam portion and serve up your childhood memories in every bite!
Cooking Tips:
1. The cookie and cream can be flavoured with the essence/ flavouring of your choice.
2. Your favourite flavour of jam can replace strawberry/ mixed fruit jam.

I knew Oreo and Bourbon were everyone's favorite biscuits but after putting a poll unexpectedly Jim Jam turned out to be everybody's favorite as well. Jim Jam are jam and vanilla cream filled biscuits which are so yummy that they are indeed my favorite as well.
Let's take a look at the ingredients and the procedure :
Step 1 : Cookies
- Unsalted Butter (1/4 Cup) ( You can use salted butter, avoid additional salt )
- Caster Sugar (1/3 Cup) ( You can use powdered sugar ) (
- Vanilla extract (1/4 Tsp) (
- Blend until its soft & fluffy
- Milk (1 Tbsp)
- Blend until well incorporated
- All purpose flour (2/3 cup + 1 Tbsp)
- Pinch of salt
- Blend for 10 seconds
- Form a ball
- Wrap it in a cling wrap and refrigerate for 1 hour
- Put dough between 2 cling films
- You can use parchment paper as well
- Roll it out with thickness 2 - 3 mm
- Cut with a cookie cutter ( I have got a larger one but you can use anything you want )
- Cut smaller circle ( I have used back of the piping tip for it )
- Cut half of them
- Place it carefully on a parchment paper.
- You can use parchment paper or butter paper or silicone mat
- Create a pattern with back of the knife
- On the cookies which haven't been cut, create a smaller impression of a small circle
- Again create the same fanning pattern
- In the circle pierce 5 dots with a toothpick
- These are exact jim jam designs you can skip if you wish
- Pre-heat oven at 180C and back for 10 - 12 min
Step 2 : Filling
- Unsalted butter (1/8 cup)
- Blend for a 1 min
- Vanilla extract (1/8 Tsp) (
- Milk (1/2 Tbsp)
- Icing sugar (1/2 Cup) (
- Blend until well combined
- Put it in a piping bag
- In another piping bag put 2 Tbsp Mixed Fruit Jam and mash or squeeze it up so that it gets a piping consistency
Step 3: Assembling
- Flip a cookie with no circle cut
- Pipe vanilla cream leaving out the middle space
- Pipe jam in the middle
- Put another cookie on the top
- And viola.. Homemade Jim Jam cookies are ready.
