How To make Jack Jubilee
1 md Onion, finely chopped
2 T Butter
8 oz Tomato sauce
-(1 large can) 4 oz Green chili peppers,
-chopped (1 can) 1/2 t Salt
2 Eggs, slightly beaten
1 c Half-and-half
-(or light cream) 11 oz Corn chips (one package)
1/2 lb Monterey jack cheese
-(cut into 1/2 inch cubes) 1/2 c Cheddar cheese (shredded)
Paprika 1 c Sour cream
Preheat oven to 350 degrees F. Saute onion in butter until transparent. Stir in tomato sauce, chopped peppers and salt. Simmer 5 minutes. Remove from heat. Combine eggs and cream. Stir into sauce. Place half the corn chips in bottom of a 1 1/2 quart casserole. Add in layers, half the Monterey Jack cheese, half the sauce. Repeat. Top with sour cream. Sprinkle with shredded cheddar cheese and paprika. Bake, uncovered, for 30 minutes. NOTES: * A casserole made with jack cheese -- I got this recipe from the National Dairy Council. It's good winter food; easy to make and rich. Don't let the corn chips put you off; normally, such an ingredient would make me think it's one of those recipes for people who don't like to cook and don't care about good food. Take my word for it: this recipe is an exception. * Ingredient notes for non-US cooks: Monterey Jack cheese is a bland American cheddar from Monterey, California. Try substituting Dunlop (Scottish), Lancashire (English), or Cantal (French). Half and half is a dairy product that is 50 percent whole milk and 50 percent heavy cream; light cream makes a reasonable substitute. Corn chips, often sold as "Fritos" or "Doritos," are a packaged snack food made of deep-fried pressed cornmeal. I cannot think of any reasonable substitute for them in this recipe. Platinum Pudding / Jubilee Trifle
This dessert won a competition organised by posh London grocers Fortnum & Mason to find a suitable dessert for Queen Elizabeth II's Platinum Jubilee celebrations. It is 70 years since she was crowned. This magnificent trifle was inspired by the lemon posset that was served at the Coronation meal. It is a very lemony-flavoured trifle, along with aromatic almonds. The dessert was created by Jemma Melvin from Southport in north-west England. If you decide to make this incredible pudding, be prepared for a lot of work. The trifle has 9 elements - Lemon Curd Swiss Roll (lemon curd and sponge), St Clement's Jelly, Custard, Amaretti Biscuits, Chunky Mandarin Coulis, Whipped Cream, Amaretti Biscuit Crumb and Jewelled White Chocolate Shards. Platinum Pudding is a truly magnificent creation.

Making JUBILEE CUPCAKES | Celebrating The Queens 70th Jubilee. Cupcake Recipe in Description
Evie and Leah enjoy baking these light and fluffy cupcakes as part of their celebrations of the Queen's 70th Jubilee.
Why don't you try this at home
Recipe
Ingredients
For the cupcakes
175 g margarine
175 g caster sugar
2 tsp vanilla extract or vanilla bean paste
3 eggs
175 g self-raising flour
For the buttercream
140 g unsalted butter softened
280 g icing sugar
1-2 tbsp milk
Method
1. Pre heat Oven to 160 C for fan assisted ovens or 180 C for non fan ovens
2. Beat the butter and sugar together until light and fluffy
3. Add the vanilla extract and eggs and mix
4. Add the flour and mix until it is combined. Spoon into 12 cupcake cases filling each 2/3 full
5. Bake in the oven for 15-18 minutes. You can check if cooked by inserting a knife or prong into the centre of the cake, if it comes back out clean, then they are cooked.
6. Leave on a wire rack to cool completely
7. Once the cakes have cooled, make the buttercream. Start by beating the softened butter
8. Add in the icing sugar and beat until mixed ( We did this a bit at a time to avoid big dust clouds if using a handheld mixer)
9. Gradually add the milk a little at a time until you get a smooth but still quite thick consistency (we were using food colouring so we skipped the milk to avoid making the icing too wet)
10. Spoon the buttercream into a piping bag and pipe onto the cupcakes. Finish with any decorations.
