2 ts Cornstarch 1 tb Sugar 1 cn (1 lb) pitted black bing 1/3 c Warm cognac Cherries 2 Strips orange peel 1 Strip lemon peel Add cornstarch, sugar and 1 cup syrup from cherries. Drop in orange and lemon peel. Cook, stirring constantly over med heat until thick. Let boil 3 min. Discard peels and add cherries. Transfer to chafing dish and add cognac. Blaze with a match. Ladle flaming over vanilla ice cream.

BETH'S EASY CHERRIES JUBILEE RECIPE Serves 4
INGREDIENTS: 4 tbsp (60 g) butter 4 tbsp (46 g) brown sugar 2 cups (300 g) frozen cherries 1/2 tsp (2.5 ml) of almond extract Hagen Daaz Swiss Almond Ice Cream (or Chocolate Chip would work well too) 4 tbsp (40 g) raw almonds
METHOD: Melt butter in a skillet until foamy. Add brown sugar and whisk to combine. Add frozen cherries sautee until syrupy. Add almond extract cook down a bit more until a nice sauce develops.
Portion out ice cream into some fancy glasses pour 1/2 cup of cherry sauce over the ice cream, top with raw almonds. Serve with some fancy store-bought cookies.
NOTE: Cherry sauce can be made 1-2 days before and reheated before serving (in microwave or on stove top)

Cooking Cherries Jubilee for a birthday celebration. The flaming dessert was delicious! The recipe was created by Auguste Escoffier, who prepared it for one of Queen Victoria's Jubilee celebrations. The cherries are flambeed with liquor and served with shortcake and ice cream.
