Did You Know Brownies Are A Chicago Thing? | Cooking The States (Illinois)
Illinois is my home state and I consider myself pretty versed in the famous foods that come from this area, specifically from Chicago, the city in which I reside. We all know about Italian beef, pizza, popcorn and hotdogs as staples in Chicago food tradition, so I was astonished when I recently learned that the ever-popular BROWNIE was invented right here in Chicago. That’s right... the brownie was invented in the Midwestern united states. I would have guessed it to be a product of European exploration/colonization when cocoa was brought back from the “new world,” but yeah, that’s not a thing.
Nobody is sure who actually invented the brownie, but the credit goes to Bertha Palmer for directing the production of the portable chocolate treat as a snack that was served during the 1893 World’s Fair. Five years later, after the recipe came to prominence and was shared by the masses, the first brownie recipe was published in the Sears Roebuck Catalog - a big deal at the time. Seeing as the O.G. recipe is over a century old, I felt that there was room for improvement.
Below you’ll find a link to my website which hosts the original recipe that I’ve transcribed from the Palmer House website. The second recipe is the one from this video. It’s my take on an updated, more “fudge-y” brownie. I prefer my brownies rich and dense, so we’re going to use a pastry chef trick to get that end result. Let’s bake. ???????? Adam

Hi, Kristy in the Rada Kitchen, and today I want to show you how to make a giant ice cream sandwich. It would be a perfect cake for a birthday party, and it just takes prepared brownie mix, and I want to show you how to prepare the pans.
So you'll need 2 8 x 8 inch pans. I'm going to use the Rada Stoneware. But we're going to take that brownie out so we're going to line it with tinfoil. So you just cut a piece of tinfoil to the size of the pan. You just push it around the edges, so it's pretty smooth. I am doing the shiny side up. The shiny side reflects the heat, so if you put in on the bottom it's going to force the heat away, so you want to make sure the heat comes into your brownie mix. Now just coat that with cooking spray. So you can set those aside.
Then I have family size fudge brownie mix. Just bought it at the store in the box. To that I'm going to add three Milky Way candy bars, or about a cup of candy pieces. We're just going to chop those up. I put these in the freezer, so they're easier to chop, and this Rada French Chef's knife chops right through those. This is going to add a caramel taste to these brownies.
Now this is just a box of brownie mix. You need a 19-22 oz. size. You're just going to compare it to the instructions on the box. Then add a fourth cup of water, two eggs, half cup oil, and then just stir for 50 strokes.
So once we've stirred our brownie mix, we're going to add our chopped Milky Way candy bars. You'll want to have your oven preheated to 350 degrees. And now, we're going to evenly pour that batter into our prepared 8 x 8 inch pans. Make sure you push it into the corners. Then we're going to put this in that 350 degree oven for about 25 minutes.
So our brownies got baked. I let them cool and had them in the freezer for an hour. And now, I'm going to put that on a serving plate. That's why you want to grease your tinfoil really well, so it doesn't stick to that. Here I have a quart of vanilla ice cream. It's best if you get it in a box like this. I softened it a little bit in the refrigerator. I'm just going to take it out of that container and take this ham knife and make slices of ice cream and lay that on top of that brownie. We can level off the edges.
And now we'll take our other brownie and place it on the ice cream. You can level off the sides with a knife. Then you'll want to put this back in the freezer until it's ready to serve. I like to take a little whipped topping and spread it over it. If you do put it in the freezer, you'll want to get it out 15 minutes before you serve it, so the ice cream has time to soften. And that's the giant ice cream sandwich cake. Enjoy!
