Oatmeal Fudge Brownie Recipe with T-ROY's Mom
My mother makes her delicious Oatmeal Fudge Brownie bars!
Oatmeal Fudge Bars
2 Cups Dark Brown Sugar
2 Eggs
2 tsp Butter
1/2 tsp Salt
1 tsp Baking Soda
1 Cup Chopped Nuts
1 pack (12 oz) Semi-Sweet Chocolate Chips
3/4 Cup Butter
2 tsp Vanilla extract
3 Cups Quick Cooking Oats
1 Can Condensed Milk
2 1/2 Cups Buttermilk Baking Mix (Bisquick or Pioneer brand)
Heat oven to 350F. Grease a jelly roll pan.
Mix brown sugar, 3/4 Cup butter, eggs, and vanilla.
Stir in baking mix, oats, and baking soda.
Heat chocolate chips, milk, and 2 Tbsp butter, and salt in a sauce pan over low heat stirring constantly until smooth. Once smooth, remove from heat and stir in vanilla and nuts.
Press 3/4 of oat mixture with greased hands into the greased jelly roll pan to make an even layer.
Spread chocolate mixture over oat layer.
Drop remaining oatmeal mixture onto chocolate layer using a tablespoon.
Bake until light brown (25-30 mins).
Cut into 1x2 inch bars.
These bars keep very well when refrigerated. Enjoy!!!

This Atole De Avena takes me far back to my childhood, my mom prepared this for us regularly. We loved it alone or with raisins, and it was delicious anytime of the day or night. This is a traditional Mexican oatmeal recipe, some like it thick and some like it thin and many like to blend the oats into a thin powder then make it into a smooth drink. I like it thick enough to eat it with a spoon or drink it right out of the cup, I’m telling you it’s all good. Atole de Avena is also delicious cold and topped with your favorite fruit. I hope you give it a try.❤️
