By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.
Following that thought put me and my partner, George on a plane to Alicante Spain in 2014 where we have lived ever since. Our mission is to explore the aromas, ingredients and collective imaginations that are all part of Spain’s vast culinary heritage.

My Mom’s Hummus Recipe ????
400 grams of chickpeas (15 oz)
150 grams sesame seed paste (5oz)
1 juicy lemon
Salt to taste
Cold water (around 1/4-1/2 cup)
Optional: garlic, olive oil, cumin, paprika
1/4 cup ghee
1/2 lb lean beef
Salt to taste

How to make the BEST HUMMUS!
This is the best hummus recipe based on the authentic Lebanese methods. Hummus is a healthy snack that's made with a few ingredients and perfect for parties!

???? HUMMUS INGREDIENTS
1 15 ounce can chickpeas
3 tablespoons lemon juice
2 tablespoons tahini
2 garlic cloves
1/2 teaspoon salt
Extra virgin olive oil for serving
Paprika for serving
Fresh parsley for serving
INSTRUCTIONS
1. Place chickpeas in a bowl of water and rub them together to peel the skin (optional step, but helps create a creamy texture).
2. Drain the garbanzo beans and transfer them to a food processor. Blend them alone until they become powder-like, scraping down the sides as needed.
3. While the food processor is running, add the ice cubes, lemon juice, tahini, garlic clove and salt, and blend for about 5 minutes until smooth. Once everything is blended, you can slowly add hot water while the machine is running to get a smoother texture.
4. Taste and adjust as needed by adding more lemon juice or salt.
5. Spoon the hummus onto a plate or bowl, and spread the hummus with the back of a spoon to create swirls.
6. Drizzle with olive oil, sprinkle with sumac and fresh parsley. Serve cold or at room temperature.

Makes 1 bowl
???? 1 x 400 g (14.1 oz) tin of chickpeas, drained + rinsed
???? 4 tbsp maple syrup, plus extra for topping
???? 4 tbsp tahini
???? 5 tbsp cocoa powder
???? 1/2 tsp vanilla extract
???? 4 tbsp ice cold water
???? 1 small handful of cacao nibs, optional
???? salt, optional
???? fresh strawberries, to serve
Add the chickpeas, maple syrup, tahini, cocoa powder and vanilla extract to a food processor and blend until smooth.
While it’s blending, pour in 2 tablespoons of the ice cold water and keep blending for 4-5 minutes or until the hummus reaches a super smooth consistency. Add more ice cold water if the hummus is too thick.
Transfer the hummus to a plate or bowl and top with a drizzle of maple syrup, cacao nibs and a small pinch of salt.
