How To make Holiday Fruitcake with Louisiana Pecans
1 lb Dark Raisins
1 lb Light Raisins
2 lb Currants
1 lb Citron
2 lb Louisiana Pecans
4 1/2 c All-Purpose Flour
2 ts Nutmeg
1 t Mace
1 t Cinnamon
1 lb Butter
1 lb Brown Sugar
12 Eggs
6 oz Orange Marmalade
1/2 c Honey
1/2 c Sherry
GARNISH:
Candied Cherry Halves Pecan Halves
Combine raisins and currents with citron and nuts. Sift flour with spices and resift; mix 2 cups of sifted flour mixture with the fruit and nuts. Cream butter until soft and smooth, blend in sugar throughly, and add eggs one at a time, beating well after each egg is added. Add marmalade, beat. Add remaining flour mixture alternately with honey and sherry mixing well after each addition. Stir in floured fruits and nuts, and mix well until distributed through the batter. Pack into loaf tins lined with 2 thicknesses of waxed paper, top with candied cherries and whole pecans halfs and bake at 250?F for 2-1/2 to 3 hours, depending on size of pan.
Cakes are done when they pull away from sides of pan and are firm to the touch in the center. EDITORS NOTE: Cakes wrapped and stored in a cool place are at their best after 2 or 3 weeks of aging. Louisiana Conservationist - November/December 1991

INGREDIENTS I USED:
Baked at 320 degrees for 1 hour 20 mins. (Time may vary depending on your cake pans and/or oven.)
2 Sticks UNsalted Butter
2 C Craisins
1/2 C Light Brown Sugar
3 Tblspn of Molasses
3/4 C Apple Juice
3.5 Oz Blueberries
6 oz. Pineapples
6 oz. Apricot
3 Large Eggs
1 3/4 C All Purpose Flour
1 Tsp Baking Powder
1/2 Tsp Salt
1 Tsp Cinnamon
1 Tsp Allspice
1/2 Tsp Nutmeg
Orange Extract
Lemon Extract
Pineapple Oil
Brushed with warm apple jelly once done
*Can add Pecans if you so desire

This cookie was gifted to me by a co-worker a few years ago for Christmas, and I've never forgotten the taste. So I searched and found the recipe that appealed to me. Yummy!
Recipe from Lucy Whiddon of Independence, La.
Prep Time: 5 to 15 min
Total time 40 minutes
1/2 lb. candied pineapple chunks
1/2 lb. candied cheeries red or green
1/2 cup flour (plain or self-rising)
pinch of salt
1/2 cup coconut
2 cups of chopped pecans
1 can sweetened condensed milk
1. Dredge fruit in flour. Add salt, coconut, and nuts.
2. Add milk and mix thoroughly.
3. Drop by spoonfuls onto greased cookie sheet. Bake at 275 degrees for 25 to 30 minutes. --I cooked until the edges were golden brown.--
4. After cooling, store in air-tight containers for 5 days before serving.
Yield: Approx. 4 dozen cookies depending on size. --I think it would be best to drop by tsp full because they really spread.--

Preheat oven to 325 degrees

1/2 cup white sugar
1/4 cup molasses
1 egg
2 cup all-purpose flour
2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp ground cloves
1 1/2 tsp ground ginger
1/2 cup candied cherries, we used red and green, chopped
1/2 cup candied pineapple, chopped
1/2 cup candied orange peel
1/2 cup pecan pieces, chopped
Cream butter and sugar. Add molasses. Mix well. Add egg, mix well. Add spices, mix well. Add fruit and pecans and stir by hand until well mixed. Chill dough 30-45 minutes. Drop onto sheet pan lined with parchment paper. Bake 15-20 minutes. Cool on cooling racks then transfer to platter to serve.

How to Make a 3 Ingredient Peach Cobbler With Cake Mix
Delicious and so easy to make! Three Ingredient Cake Mix Peach Cobber from @TheHowToHome
Ingredients:
15.25 ounce yellow cake mix
2 - 21 ounce cans peach pie filling
½ cup butter
Preheat oven to 350° F.
Grease casserole dish or large cast iron skillet (or use baking spray to prep pan).
Add peach pie filling to bottom of dish covering the entire bottom.
Generously sprinkle dry cake mix over the peaches covering every area evenly.
Cut cold butter into 15 portions and place an equal distance across the top of the cake mix.
Place casserole dish in oven and bake for 60 minutes until the topping is golden brown and some of the peach pie filling is bubbling through the upper crust.
