Before I detail my tips on making this delish dish, I do want to suggest making the recipe the day before you intend to serve. This will accomplish two things, the first being a tastier stew once the flavours have had a chance to mature. You’ll also be able to easily remove the fat off the top of the stew, making it so much more enjoyable. This little added step is detailed in the instructions below.

Hillbilly Jilly Homemade Beef Stew
Ingredients
Makes about 8 servings
● 1 to 1/2 lbs. beef cut in stew size chunks
● 3 tbs. all-purpose flour
● 2 tsp. olive oil
● 2 cloves garlic minced
● 2 cups organic beef stock
● 2 large onions
● 1 bay leaf
● 1/8 tsp. rosemary
● 1/4 tsp. black pepper
● 2 cups carrots chopped
● 2 medium potatoes chopped
● 1 large turnip chopped (optional but delish!)
● 1/4 cup water
● salt to taste
Directions
1. Dust beef with flour and sear over medium-high heat in large stock pot
2. Add garlic and cook for 1 minute - stir
3. Add beef stock, rosemary, black pepper, bay leaf and bring to boil
4. Reduce heat to low, cover and simmer 1 1/2 hours
5. Now add potatoes, carrots, onions and turnips
6. Bring to boil, then reduce heat to medium-low, cover and simmer for 30 minutes
7. Whisk flour and water in bowl and add to stew – stir frequently
8. Simmer for 10 minutes on low
Note: If including turnips, add another cup of broth. Remove bay leaf before serving. Salt to taste; we use pink Himalayan salt – better for you and the flavor is amazing.

Warm up those bellies throughout the fall & winter seasons with a big comforting bowl of our Hearty Beef Stew…in fact, you’d better double up this recipe, because they’ll all be coming back for another bowl tonight!
➡️Rachel’s Tips:
If you do not have wine on hand, you may substitute the wine for additional bone broth.
The wine adds a lot of flavor and is used to deglaze your pot.
All of the alcohol will cook out of your final meal, so no worries there.
Do not use “cooking wine” as that has a flavor much like rubbing alcohol…LOL.
For best flavor and results use a decent to a nicer bottle of dry wine that one would drink because this will produce the very best flavor.
❓Which do you like better, regular potatoes or sweet potatoes!?
???? While both offer nutritional benefits, sweet potatoes are considered a “superfood” because of all the vitamins and minerals they contain.
✅ Just as an example, 1 sweet potato contains almost 400% of your daily vitamin A requirements! They also contain vitamins B, C, and D as well as a wide range of minerals.
