How To make Hawaiian Turkey Kebobs
1 lb Cooked turkey, 1" cubes
8 oz Can pineapple chunks
1 md Onion, cut into quarters
1 Sweet green pepper in chunks
10 Cherry tomatoes
1 tb Soy sauce
1/2 ts Curry powder
1/4 ts Ground ginger
Begin each skewer with a cube of turkey. Add pineapple. Separate the onion into pieces and add one piece. Add the green pepper and tomato. Repeat. Put the skewers in a baking pan. Combine the soy sauce, pineapple juice, curry powder and ginger. Pour over the kebobs. Bake in 400 F oven for 15 min, turning frequently to coat with sauce. Serve on rice, if desired. 1/4 recipe not including rice: 177 calories, 3 lean meat, 1/2 fruit, 1
vegetable exchange 14 grams carbohydrate, 22 grams protein, 4 grams fat, 271 mg sodium, 453 mg potassium, 54 mg cholesterol.

INGREDIENTS:
FOR THE MARINADE:
1/2 cup Dark Brown Sugar
3 cloves Garlic, minced or pressed in a garlic press
1-1/2 teaspoons grated or minced Fresh Ginger
1 cup Pineapple Juice
2 tablespoons Tamari {or Soy Sauce}, plus more for drizzling
FOR THE KEBABS:
3 boneless-skinless Chicken Breasts, cubed
1 Red Bell Pepper, cubed {seeds and stem discarded}
1 Orange Bell Pepper, cubed {seeds and stem discarded}
2-3 cups Fresh Pineapple, cubed
1 Sweet Onion, cut in to chunks
EXTRAS:
Metal Skewers
4 cups cooked Brown Rice
Sliced Green Onions
DIRECTIONS:
In a jar or bowl combine the marinade ingredients. Whisk until the sugar is dissolved. Let the marinade sit to get the flavors to meld and store in the fridge until ready to use
Skewer the chicken, pineapple, peppers and onions alternately and place into a shallow pan or large resealable plastic bag. Pour marinade over top and toss to coat.
Marinate for 30 minutes, turning every so often.
Preheat your grill to medium-medium high and cook for 12-15 minutes or until the chicken is cooked thoroughly and their is a good char on the vegetables.
Serve with rice of your choice, sprinkle with sliced green onions and drizzle a little more tamari {or soy sauce} over top.

600g chicken breast fillets
2 tbsp dark soy sauce
1 tbsp sugar
1 tbsp honey
2 inch piece ginger
1 tbsp vingegar
2 tbsp water
2 garlic cloves
1 spring onion
1/2 tsp salt on chicken (optional)
1 tbsp corn starch
1-2 tbsp oil
Note: Keep on a medium high heat throughout and just before adding the sauce to the chicken, reduce to a low heat.
