How To make Harveys Coconut Macaroons
1 cup shredded coconut
3 1/2 cups almond paste
1 cup all-purpose flour
2/3 cup sugar
5 eggs
1/2 cup chopped walnuts
Red candied cherries -- halved
In a food processor or blender, process coconut until finely chopped; set aside. In a mixing bowl, beat almond paste until crumbled. Gradually add flour, sugar and coconut; mix well. Add eggs, one at a time; beat until smooth. Stir in nuts. Place dough in a pastry bag with a large star tip; pipe onto baking sheets covered with parchment paper or foil. Top with cherries. Bake at 350 degrees for 15-20 minutes or until golden brown. Cool 5 minutes before removing to wire racks.

1/2 CUP ALL PURPOSE FLOUR

1/3 CUP OR 76G UNSALTED BUTTER

Here is our first recipe of Macaroons. As there are so many versions of it, I will probably teach you another version of it in the future. This recipe however combines traditional method of making macaroons with egg whites and adding some twist to it by using some condensed milk.
According to legend, the macaroon’s humble beginning dates back to an 8th or 9th century Italian monastery. The culinary encyclopedia Larousse Gastronomique edited by Jenifer Harvey Lang (Crown, 1988) says the earliest record has been traced to Commercy, France, in the year 791, where they were made at a local convent. Another source has its origins in Italy, coming to France in 1533 with the pastry chefs of Catherine de Medici, the wife of King Henry II. There was considerable travel between these two regions as various empires and monarchs attacked each other so it is unclear where the first macaroon was created. Most historians are inclined to believe that the macaroon originated in Italy, probably Venice, and was transported to France by sailors where it was further refined by French pâtissier techniques. -Judy Pister

~Bake at 180C for 15min
~I used a 4cm diameter ice cream scoop/disher
~You may also roll the dough on your hands into small balls.
~You may adjust the amount of condensed milk, if it's too dry, add a tablespoon at a time until desired consistency is achieved.
~Rolling of dough in extra coconut is Optional.

1 can 380grms condensed milk - 33
1 can 370ml evaporated milk 29
1/2 tsp calamansi juice 1
1 tsp vanilla extract 1
PUTO RECIPE????
1/2 kilo(4 cups)cake flour - 24
1 1/2cups white sugar - 15
1/2 cup vegetable oil - 5
1 tsp vanilla extract (optional) - 1
1/4 tsp salt - .50
3 cups water - 1
4 tbs baking powder - 4
2 sachets (1/2 cup) powdered milk - 24
5 eggwhites- price included in the flan recipe
COST OF INGREDIENTS - 208.50
OVERHEAD COST : 50(gas, tranpos etc)
TOTAL COST : 258.50
Yields: 63pcs (large molder)
258.50(total cost) ÷ 63(yields) = 4.09( cost per piece)
SRP: 8-10 pesos each ( retail price may vary depende sa packaging na gagamitin mo)
63(yields) × 10(SRP)= 630
630 - 258.50(gastos) = 371.50(estimated profit)
Ang SRP neto ay 8-10 pesos each depende sa ginastos nyo at packaging na gagamitin mo ito ay sample computation lamang .Tandaan mas maramihan na gawa,mas makakamura sa cost mas malaki ang tutuboin.

2 1/2 cups all-purpose flour OR plain rice flour (not glutinous)
2 tablespoons baking powder
½ cup white sugar
1 cup water
1 1/4 cups coconut milk
4 whole eggs
¼ cup melted butter
½ teaspoon of salt
1-2 cups grated processed cheese
4 pcs salted egg sliced, for topping
1 cup easy melt cheese, for topping
Prepare: 8 pcs Bibingka moulds lined with toasted banana leaves
Oven: 400 F ---- Baking time: 25-30 minutes or until golden brown
TIP: Make sure your Baking Powder is freshly-opened. Do not use baking powder that has been sitting in your pantry for more than a month or two.
