4 c All-purpose flour 1 tb Sugar 1 ts Baking powder 1 ts Salt 1 3/4 c Shortening 1 Egg; beaten 1/2 c Cold water 1 tb Vinegar Recipe by: Southern Living Combine flour, sugar, baking powder, and salt in a large bowl; cut in shortening with pastry blender until mixture resembles coarse meal. Stir in egg, water, and vinegar. Divide dough into 5 equal parts; shape each into a ball and wrap tightly. Chill. May be stored up to 2 weeks in refrigerator. To fit into pieplate, roll each ball of dough to 1/8-inch thickness on a lightly floured surface. Place in a 9-inch pieplate; trim off excess pastry along edges. Fold edges under and flute. For baked pastry shell, prick bottom and sides of pastry generously with a fork. Bake at 450 degrees for 10 to 12 minutes or until golden brown. -----

Brush the edge of the pastry case with beaten egg and weave the strips across the top, letting them hang over the edges of the tin and leaving a 2cm gap between each. Then gently press the strips of pastry into the edge of the tart to seal, trim off any excess with a knife and brush the top with beaten egg.

170 g plain gluten free flour 1 tsp xanthan gum 1 medium egg 1 tsp water 110 g unsalted butter, (cubed) Pinch salt
OPTIONAL: 1 tbsp caster sugar (for sweet pastry) 1 egg (beaten, for brushing pie tops)
This recipe also works really when substituting half of the butter for lard or Cookeen/Trex (veggie option) - it makes the pastry extra crumbly and delicious!
