Ingredients
For the Dough - Step 1:
235ml Milk
30ml Cream
1 Tbs Demarara sugar
2 Tsp Yeast
For the Dough - Step 2:
375g Strong flour
2 Tsp Salt
1 Tbs Butter
1 Egg, lightly beaten
Finishing:
1 Egg, Lightly beaten
Instructions
Step 1:
In a small saucepan, combine the milk, cream and sugar. Heat this to 40c. Remove from the heat and sprinkle the yeast over the surface of the mixture. Allow this to stand for 10 minutes.
Step 2:
In a large mixing bowl, combine the flour and salt. Add the butter and rub this into the flour until it resembles fine bread crumbs. Pour in the yeast mixture and 1 egg. Mix this until a sticky dough comes together.
To Knead:
Lightly flour your work surface and turn out the dough. Knead the dough firmly but gently for 10-15 minutes until smooth and elastic.
Place the dough back into the bowl, cover with a damp towel and allow the dough to rise for 90 minutes.
Turn the dough out after 90 minutes, knead very briefly, and form this into a sausage shape. Divide the dough into 6 equal portions.
Form the portions into buns and transfer them to a lightly oiled baking sheet.
Cover the buns with a damp towel and allow them to rise for another 90 minutes.
To Bake:
Preheat your oven to 200c or 400f. Paint the buns with the egg and sprinkle the tops with sesame seeds.
Bake the buns for 15 minutes until well risen and golden brown.
Remove the buns from the oven and transfer them to a wire rack to cool.

INGREDIENTS
240 ml milk, lukewarm
7 g dry yeast
12 g white sugar
1 egg
28 g butter, softened
410 g all purpose flour
8 g salt
1 tablespoon vegetable oil
For the topping:
1 egg, beaten
sesame seeds
INSTRUCTIONS
1. In a medium mixing bowl, combine the milk, yeast ans sugar. Let sit for 5 minutes.
Add the egg and butter, stir until combined. Stir in half of the flour and salt. Add the remaining flour and knead until a smooth ball of dough begins to form. Add more flour if dough is to sticky. Oil your hands and knead the dough for 2-3 minutes more.
2. Place the dough in a oiled bowl and cover. Let sit for 60 minutes or until doubled in size.
3. Line a baking sheet with parchment paper. Use your hands to gently pat and stretch the dough rounds into 7 flat disc shapes about 1/2 inch thick. Flatten lightly with your hands. Arrange buns about 1/2 inch apart on prepared baking sheet. Cover and let sit for about 60 minutes more or until doubled in size.
4. Brush top of each bun with beaten egg and sprinkle some sesame seeds on top.
5. Bake in preheated oven 220C 428F for about 15 minutes or until golden to deep brown.

The recipe is called 40 Minute Hamburger Buns, but I’ve never actually timed it. It definitely takes me under an hour, though, from start to finish, and these buns are AMAZING! You can use the same dough to make quick yeast rolls to go with your meal.
INGREDIENTS (ROLLS)
2 tablespoons active dry yeast
1 cup plus 2 tablespoons warm water (about 105-110º F, no hotter or you might kill the yeast!)
1/3 cup vegetable oil
1/4 cup sugar
1 large egg, room temperature
1 teaspoon salt
3 to 3-1/2 cups all-purpose flour
INGREDIENTS (EGG WASH, optional)
1 egg
1 Tbsp. water
INSTRUCTIONS
1. Preheat oven to 425º.
2. Mix ingredients well then knead dough until it’s smooth and elastic.
3. Shape dough into hamburger buns, rolls, or a combination of both.
4. Brush with egg wash (optional). (To make egg wash, beat one egg with water until smooth and well mixed then lightly brush top of each roll just before putting them in the oven.)
5. Bake rolls for about 12 minutes or so or until they are brown. If they haven’t browned to your satisfaction, you can put them under the broiler for about a minute but watch them the whole time so they don’t burn.

We can make any sort of bread in five simple steps.
The taste of bread differs according to the different ingredients that we use while making a bread like milk, egg, butter etc..And the shape differs according to how we shape the bread in the third step.
Lets see how to make these wonderful Burger Bun/Hot dog bun at home.

Ingredients
130 ml Warm Milk (not hot )
1/2 Teaspoon Active dry yeast
2 cups All-purpose flour(300 gms)
1/2 Teaspoon Salt
2 Tablespoon Sugar(30 gms)
1 Egg
30 gms Butter
Instructions
1. Prepare the Bread Dough: Mix the warm milk ,sugar and yeast together, and let sit for about five minutes until the yeast get activated. Add 1 Egg into this.Combine the flour and salt into the Yeast mixture .Stir until a shaggy dough is formed.Add Butter
and Knead the Dough. Knead the dough for about 10 minutes, until the dough is smooth and elastic. Add more flour as needed to keep the dough from sticking to your hands or the work surface, but try to be sparing. It's better to use too little flour than too much. If you get tired, stop and let the dough rest for a few minutes before finishing kneading.
2.First Proofing( Let the Dough Rise for 2-3 hours)
Clean the bowl you used to mix the dough and pour little olive oil. Pop the dough in the bowl and turn it until it's coated with oil. Cover with a clean dishcloth or plastic wrap and let the dough rise until it's doubled in bulk.
At this point, you can refrigerate the dough until it is needed. You can also bake one or two breads at a time, saving the rest of the dough in the fridge. The dough will keep refrigerated for about a week.
3. Divide and Shape the Dough: Gently deflate the dough and turn it out onto a lightly floured work surface. Divide the dough and shape them according to how you want them to be.
4.Second proofing(45-60 minutes):After shaping,cover them with a kitchen towel or plastic wrap wrap until they puff up and become double in size.
5.Bake the Bread:At 400 F for 12-15 minutes ,Until they turn golden brown.
So now home made burger buns/Hotdog buns are ready:)
Additional Notes:
• Storing the Dough: Once it has risen, the bread dough can be kept refrigerated until it is needed. You can also bake one or two bread at a time, saving the rest of the dough in the fridge. The dough will keep refrigerated for about a week.

SOURDOUGH HAMBURGER BUNS
INGREDIENTS
1 cup unbleached white flour (plus extra for dusting)
1 ¼ cup 00 flour (you can use all unbleached white flour if you prefer)
¼ cup milk
1 cup sourdough starter (link to recipe below)
1 egg
3 tbsp unsalted butter, room temp.
1 tsp salt
1 additional egg for brushing
TOOLS
Measuring cups & spoons
Large Bowl
Plastic wrap
Small bowl & fork
Baking sheet
INSTRUCTIONS
1. Combine the flour, milk, sourdough starter, egg and unsalted butter. Mix until thoroughly combined.
2. Cover and allow to rest for 30 minutes.
3. Add salt and mix on medium speed for about 5 minutes - or until the dough is smooth.
4. Let rest on the counter for one hour.
5. If you are baking the same day; (skip #5 for the overnight rise)
Take out your dough, stretch and fold for about 3-4 minutes, then put back into the bowl, cover and let rest on your counter for 3-4 hours.
6. On a lightly floured surface, divide into 6 equal parts and form into bun shapes, placing them into a lightly greased pan or baking sheet
7. One hour before baking, preheat the oven to 375.
B. If baking the next day, remember to take them out of the fridge at least an hour before baking.
8. Brush the buns with egg wash.
9. Bake 18-22 minutes, until golden on top.
10. Allow to cool on a cooling rack before slicing.
STORAGE
Up to 5 days in a sealed container.
Up to 30 days in the freezer.
