Country Ham and Corn Casserole, Great way to use up leftover ham!
Country Ham and Corn Casserole is the perfect dish to throw together quick and a great way to use up leftover ham! Mix all the ingredients in a bowl, pour into a baking dish, and then bake. How simple is that? This casserole uses your favorite cornbread mix with ham, corn, and cheese. Yum, Yum!
Country Ham and Corn Casserole
Ingredients
1 1/2 cups cubed ham
1 1/2 shredded cheddar cheese
1/2 cup butter
3 eggs
1/4 chopped green onions
1 can of Mexicorn or Southwest Corn
1 can of creamed corn
1 cornbread mix (any variety)
Instructions
In a large bowl combine all the ingredients, saving 1 cup of shredded cheese for the top. Pour into a greased baking dish (7 x 11). Bake in a 350 degree oven for 35 minutes, remove and sprinkle with reserved cheese, and bake an addition 5 to 10 minutes until center is done.

Ingredients
1 tablespoon extra-virgin olive oil
2 cups leftover roasted vegetables, such as potatoes, carrots, parsnips and onions
2 cups leftover cheeses, cut into pieces, such as Brie, Parmesan, and/or Gruyere
1/4 pound Canadian bacon or Black Forest ham, chopped
1/2 cup chopped scallions
12 eggs, at room temperature
2 cups milk, at room temperature
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
Directions
Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham, and then the scallions.
Whisk together the eggs, milk, salt and red pepper flakes in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.
