How To make Grits Italiano
1 lb Hot bulk pork sausage
1/8 ts Salt
1 1/2 lb Lean ground beef
1/8 ts Pepper
3/4 c Regular grits
1/4 ts Garlic powder
14 oz Jar pizza sauce
10 oz Shredded Cheddar cheese
1 Med. onion, chopped
1 lg Green pepper, chopped
Brown sausage and ground beef in a large skillet, stirring until it crumbles; drain well. Cook grits according to package directions; spoon into a lightly greased 13 x 9 x 2 inch baking dish. Combine pizza sauce, salt, pepper, and garlic powder. Layer half each of pizza sauce, meat, green pepper, onion, and cheese over grits. Repeat layers, omitting remaining cheese. Cover and bake at 325 degrees for 25 minutes. Add remaing cheese and bake uncovered, an additional 5 minutes. 8 servings. This recipe was the first place winner in the 4-H division of the Annual Greater Grits Cook-off.

RECIPE: Grits
INGREDIENTS:
4 cups water
1/4 teaspoon Kosher salt (or to taste)
1 cup grits
Butter to taste (optional)
INSTRUCTIONS:
1: Add the water and salt to a saucepan. Bring the water to a boil over medium-high heat.
2: Turn the heat to low. Slowly stir or whisk in the grits. Whisk to eliminate any lumps.
3: Reduce the heat to low. Cover the saucepan. Cook, until thickened, stirring occasionally (15 - 20 minutes).
4: Remove from the heat. Stir in butter if desired.
NOTES:
For thicker grits decrease the water. For thinner grits increase the water.
Grits are made from dried ground hominy (a form of corn).

This recipe is secret. This recipe was obtained under the cover of night. This recipe is from Florida. Meyhem is never finished with shrimp, and the people know it, so one person sought him out and made this shrimp and grits recipe for him in Florida.

Don't y'all toss away those leftover grits pour them in a baking dish and let stiffen. Cut them out and fry them up. You'll love them!
Leftover Grits (Mine always has cheese, but you should use your best version of grits)
Eggs
Panko Crumbs
Oil
Cookie Cutter or Glass
Pour leftover grits into a baking pan and let sit in fridge over night, or about 2-3 hrs.
Beat your eggs and place in a separate bowl;
Pour Panko Crumbs in another bowl
Cut out circles and strips
Dip grit patties & strips in eggs first then panko crumbs (cover entire patty)
Heat Oil
Carefully place patties in oil, and be careful of the splattering grits and Panko Crumbs
Cook on all both sides until golden brown
Enjoy with breakfast, or even as Shrimp & Grits.
