Here’s a basic recipe for Porkkanalaatikko, Finnish Carrot Casserole:
Ingredients:
2 cup grated carrots
1 cup cooked rice
2 eggs
2 cups milk
1/2 cup heavy cream (optional, for creamier texture)
2 Tbsp brown sugar
1 tsp salt
1/2 tsp white pepper
1/2 tsp ginger (optional, for added flavor)
1/2 tsp nutmeg (optional, for added flavor)
1/2 cup breadcrumbs
Melted Butter 45g
Instructions:
Preheat your oven to 180°C
In a large bowl, combine the grated carrots, cooked rice, milk, heavy cream, eggs, sugar, salt and all the spices . Mix well until everything is well combined.
Grease a baking dish with butter and pour the carrot mixture into it.
Mix breadcrumbs and melted butter. Spread evenly on the top of the mixture.
Bake in the preheated oven for about 1 hour or until the casserole has set, and the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
Porkkanalaatikko is often served as a side dish with ham or other meats, especially during Finnish holiday meals. Enjoy!

Creamy Vegetable Casserole Recipe
An easy and delicious cheese vegetable casserole that everyone will love!
1 cauliflower
1 pepper
3 carrots
1 zucchini
Olive oil
Salt & pepper
Preheat oven to 450 degrees F. Roast vegetables for 15-20 minutes until tender.
Cream mixture:
1 cup sour cream
1 cup heavy cream
1 & 1/2 cups mozzarella cheese
Italian parsley (optional)
Bake the vegetables mixed with the cream mixture for 15 more minutes or until golden on top.

Cabbage Carrot Casserole (With A Very Special Guest) - Rise Wine & Dine - Episode 10
Looking for Something Special for Dinner tonight? Meat & Veggies all combined in one? Look No Further! We've got you Covered.
1 Small to Medium Size Head of Cabbage (Chopped)
2 Medium Onions (Chopped)
3 Cloves of Garlic (Minced)
2 Lbs of Lean Ground Beef (Already Fried Until No Pink Is Visible)
2 Reg Size Cans of Tomato Soup
2 Reg Size Cans of Water (Use the 2 Tomato Soup Cans, Empty)
2 Cups of Rice
3 Regular Size Carrots (Grated)
1 Cup of Mushrooms (Washed good & Chopped)
Preheat the Oven to 350 degrees.
First Saute over medium heat on your burner, the Cabbage, Onions & Garlic until tender. Remove from heat and place into a clean bowl and set aside until we need it in this Recipe a bit later.
Now into a Separate Bowl place the Ground Beef (Already Cooked) along with the Tomato Soup, Water & Rice. Stir well, not fast as the mixture will go everywhere and be messy.
In a 9 X 13 Glass Baking Dish that has been Greased well, start to layer the Casserole dish beginning with the Ground Beef mixture about 1/2 the mixture spread out evenly. Now place about 1/2 of the Cabbage mixture over the Ground Beef mixture, spread evenly also. Now place all of the grated Carrots for the next layer, spread evenly also. Now layer the Mushrooms also and spread out evenly also. Continue by laying down next the Ground Beef mixture, all that's left, spread evenly. Now layer the remaining Cabbage mixture for the very top layer.
Now place the Casserole Dish directly into the Preheated Oven on 350 degrees and bake for 45 minutes.
For myself, when the Cabbage tips start to go to a golden or just a little darker, I know this Casserole is now cooked.
Remove from Oven. You can serve this Casserole with warm Rolls, a Salad, Mashed Potato, etc.
Its time to dig in and you will be back for more (IMO) :)

Store remaining leftovers (if there's any left) in airtight containers and place in the Freezer. It can be stored for up to a week (In My Opinion)

Ingredients:
2 cups (250 grams) all-purpose flour
2 teaspoons baking soda
1/2 teaspoon fine sea salt
1 ½ teaspoons ground cinnamon
1 ¼ cups (295 ml) canola or other vegetable oil
1 cup (200 grams) granulated sugar
1 cup (200 grams) lightly packed brown sugar
1 teaspoon vanilla extract
4 large eggs
3 cups (300 grams) grated peeled carrots (5 to 6 medium carrots)
1/2 cup (50 grams) coarsely chopped walnuts
Bake at 350 degrees Fahrenheit (176C) for 45-60 minutes.
