How To make Gotsu

hot green chillies, slit & cut into pieces

curry leaves

mustard

teaspoon
turmeric

garlic (optional)

salt, to taste

oil
Directions:
Chop the eggplant into very tiny pieces. Heat oil, add mustard seeds, when popping add curry leaves, chillies, onions and fry till onions become translucent. Add tomatoes and eggplant and fry for another five minutes. If using tamarind paste add a cup and half of water, or pour equal quantity of extract from fresh pulp. Throw in the turmeric, salt and garlic. Let it simmer for a while until eggplant becomes really soft and is barely able to retain its shape. Remove from heat.
tomato-onion Gotsu: More tomatoes can be substituted instead of the eggplant for a tomato-onion gotsu. Add more chillies if necessary.

Chidambaram Brinjal Gothsu: This recipe is special and popular accompaniment for Idli / Dosa / Ven Pongal. Chidambaram is a famous town in Cuddalore district of Tamilnadu. Of the numerous temples the Nataraja Temple at Chidambaram is one of the most significant ones. In terms of its antiquity, richness, in terms of worship & festival traditions, in architectural & sculptural splendour, in its association with music & dance, Chidambaram is a center second to none in representing the rich cultural heritage of India.
Seeraga samba rice : This rice has a very unique aroma to it. It taste super yummy and so flavourful. The aroma of this rice is so good and it can go well with any side dishes.

Pepper Cumin Powder - 1 tbsp

Ven Pongal is one of the most famous breakfast in south India especially Tamilnadu. Pongal chutney sambar is the best combination and it is also called Milagu Pongal / Ghee Pongal. But other than these two gothsu for pongal is another superb side dish. Chidambaram gothsu is most famous one, where brinjal is the only vegetable used. This wedding style gotsu uses a mix of vegetables. Traditional pongal is the kovil ven pongal prasadam. Ghee Pongal always makes for delicious and filling breakfast.
To make venpongal, always use equal amount of rice and moong dal to get best results. Add enough ghee to make it perfect and tasty. Reducing the amount of ghee is not recommended. But if you are not fan of ghee then you can do as per your taste preferences.
The spice powder for gotsu can be made and stored for few weeks. Its dry roasting and hence it remains good. If you have the powder handy then making gotsu takes very less time. Also, instead of making it in a pan, You can give the vegetables one whistle in cooker so that it gets cooked in less time.

- 3-4 Red Chilli
GOTHSU:
- 1 Tbsp Oil
- ½ Tsp Mustard
- Few Curry Leaves
- ½ Cup Shallots
- ½ Cup Tomato
- ½ Cup Mixed Vegetables
- ½ Tsp Turmeric Powder
- ½ Cup Tamarind Water
- 2 Tbsp Cooked Moong Dal
- ½ Tsp Jaggery
- Water
- Salt
