Chinese Red chilli paste
Recipe in English:
Ingredients:
Secret Red Chili Paste:
-Lehsan (Garlic) cloves 125 gms
-Lal mirch powder (Red chili powder) ½ Cup
-Tomato ketchup 4 tbs
-Safed mirch powder (White pepper powder) 1 pinch
-Namak (Salt) 1 pinch
-Pani (Water) ½ Cup or as required
-Oil 1 Cup
Directions:
For Secret Red Chili Paste:
-In chopper,add garlic,chop well & set aside.
-In bowl,add red chili powder,tomato ketchup,white pepper powder,salt and water,mix well & set aside.
-In wok,add oil,chopped garlic and fry until golden brown.
-Now add prepared red chili paste,mix well and cook until oil separates (3-4 minutes) & set aside.
-Can be store in air tight container for up to 1 month on shelf.

Spicy Pork Back Bone Soup
Recipe
1KG Pork back bones
1 onion
6 garlic
half carrot
2 potatoes
3 habanero chilli's
4 green chilli's
4 shitake mushrooms
Thumb if ginger
2 tbsp Gochujang Korean pepper paste
3 tbsp chipotle paste
drizzle of honey
1 tbsp Chinese 5 spice
1 tbsp cayenne pepper
2 tbsp chilli powder (i used Korean chilli powder)
soy sauce
2 litre water
salt/pepper
garnish
enoki mushrroms
spring onion
thick sweet potato noodles. you can find these in any oriental supermarket - to cook them leave in cold water for 12 hours then boil for 10 minutes (pro way) or you can just boil them for 30-45 minutes until soft and springy.
