How To make Gaucho's Mushroom Chili
12 ounces monterey jack
grate
8 ounces sharp cheddar cheese :
grate
4 ounces green chilies chop
12 ounces oyster mushrooms :
slice
2 eggs
1 1/2 tablespoons half-and-half
1 1/2 teaspoons flour
Heat oven to 375~. Lightly grease a 9" square baking pan. Sprinkle half of both cheeses evenly in pan. Layer chilies and mushrooms on the cheese. Top wi th remaining cheeses. Beat eggs with half-and-half and flour and drizzle ov er all. Bake 45 minutes. Serve with chips or crackers. Cal 200; Fat 15 gr; 45 % fat. 68% fat. Source: Ray Reeb, Restaurant Venezuela. Argentine Grilled Beef Ribs, cooked Gaucho Style! This is as good as it gets! I thought this was the perfect next step cook on Sunterra Pro Series Argentine Grill as I work my way through the long list of popular proteins. This was a total of two, three-bone racks of beef short ribs, cut across the bones, into six smaller racks. This is similar to how the real gauchos prepare ribs in Argentina. I seasoned the ribs with salt and fresh ground black pepper, and basted them with a homemade red chimichurri sauce! (Recipe below) Buy Grill Rescue here:
Red Chimichurri Recipe:
12 cloves roasted garlic
2 shallots
1 cup olive oil
1/4 cup red wine vinegar
1/4 cup cilantro
2 tbs smoked paprika
2 tsp New Mexico Chile

Beef Rib With Chimichurri Sauce - A Gaucho Feast
This beef rib with chimichurri sauce recipe is an absolute must for any meat lovers out there! The sauce is quite powerful but cuts through the fattiness of the meat and is unbelievably tasty. Something the Gaucho cowboys of Argentina would appreciate. Serve the chimichurri with any grilled meat and you will appreciate it too ????
Chimichurri ingredients
100g flat-leaf parsley chopped finely
30g fresh coriander (cilantro) chopped finely
1 tbsp dried oregano
1-2 tsp dried chilli flakes
200ml vinegar
250ml olive oil
4-5 cloves garlic chopped finely
Salt and pepper to taste
1 beef rib or steak of your choice
