How To make Garlic Mousse
Ingredients

each
garlic, whole heads
1
tablespoon
olive oil
2
cup
whipping cream
1
salt, to taste
1
pepper, white, to taste
2
tablespoon
chives, chopped, optional
Directions:
Rub garlic heads with olive oil. Wrap individually in aluminum foil and roast in 375 degree oven for about 45 minutes.
Remove roasted garlic from oven and squeeze the cooked garlic from from each clove. Puree softened cloves in food processor.
Whip cream until soft peaks form. Fold whipped cream into garlic puree. Season to taste with salt and white pepper. Add chives if desired.

Today we are making Lebanese Toum (Garlic Sauce), it’s super delicious, and famous for the spread in Shawarma!
* This recipe is adjustable, if you want it lighter, and less garlicky, use 5 cloves of Garlic but keep all the other ingredients the same *

Super smooth chicken liver mousse
Chicken live mousse
1 lbs chicken liver
1.5 c milk
Soak for 4- 12 hours
1 large shallot
2 cloves garlic
Salt & Pepper to taste
2oz brandy
Thyme
4 oz butter
Pickled radishes
1/2c vinegar of choice
½c water
1/4 c sugar
Pinch of salt
sour dough bread
Pickled mustard seeds

160g (½ jar) lemon curd
340g tub cream cheese (i used Philadelphia)
227ml pot double cream
397g tin condensed milk
3 unwaxed lemons, zest and juice
2 unwaxed limes, zest and juicebase:
1 pack ginger biscuits
125g (half a stick) butterserve with:
sherbet/popping candy
fresh berries
