How To make Flourless Chewy Oatmeal Cookies
1/3 c Unsalted butter
1 1/2 c Rolled oats
1/2 c Sugar
1/4 c Brown sugar; scant, firmly
-packed 1/8 ts Salt
1 ts Vanilla extract
1 Egg
Recipe by: The Washington Post 10/30/96 Melt the butter and set aside to cool. Place oats in a medium-sized bowl. Stir in both sugars and the salt and blend to break up any lumps. In a separate bowl, whisk together the melted butter, vanilla and egg. Stir this into the oat mixture, mixing with your hands or a large wooden spoon to work in the ingredients. Form into a large ball of dough. Chill the dough 20 minutes. Preheat oven to 350 degrees. Meanwhile, prepare a baking sheet by lining with parchment paper. Form the chilled dough into 1-inch balls and flatten down very slightly on the baking sheet. Bake for 13 to 17 minutes or until the edges are nicely browned and the tops of the cookies are medium golden in color. Cool well on the baking sheet (about 10 minutes) before attempting to remove, using a metal spatula or icing knife. The dough can also be brought to room temperature and flattened more when placed on the baking sheet to make a large, crisp and lace-like cookie. Keep the cookies refrigerated. Chewy Gluten Free, Vegan Oatmeal & Raisin Cookies
A friend of mine recently inspired me to try gluten free recipes and while I had the option of purchasing gluten free flour or flour substitutes in the grocery, I wanted to experiment a bit with the stuff I had in my pantry.
I got the idea to try this recipe after doing my oats and flax seed bread video. I thought, if I could make bread with that mixture I could probably use it for cookies as well.
So I decided to take this recipe that you can find at the back of the cover for the Quaker Oats container and tweak it to make it gluten free and vegan. I mean, if we going hipster, is best we go all the way.
So for this recipe I'm using golden flax-seed but the brown one will work just as good, oats, raisins, cardamom, fresh grated tonkabean, vanilla essence, baking soda, brown sugar and olive oil.
To create our flour substitutes we're going to grind the flax seed and the oats in a coffee grinder. Now you could go out and buy flax flour and oat flour but there is a huge price difference between regular flax and oats and the flour versions. My advice would be to spend a $200 TT dollars and invest in a coffee grinder. Its one of those kitchen gadgets that will take your kitchen adventures into a whole new realm. Guaranteed or your money back.

Banana Oatmeal Cookies | Easy No Eggs No Flour No Sugar Cookie Recipe
i n g r e d i e n t s :
• 2 ripe bananas
• 1/4 tsp salt
• 1/4 tsp ground cinnamon (optional)
• 1 1/2 cups (150 g) rolled oats
• 1/4 cup (50 g) dark chocolate chips
• 1/2 cup (50 g) pecans, chopped
• 1/3 cup (50 g) dried cranberries
Bake the cookies at 375ºF/190ºC for 20-22 min. This recipe makes about 15 cookies.
* The baking time and temperature are only a guide. As every oven is different, you may need to make adjustments to get the right result.

Wet Ingredients:
73 g | ⅓ cup neutral-tasting oil
100 g | ½ cup brown sugar
24 g | 2 Tbsp granulated sugar
45 g | 3 Tbsp non-dairy milk
½ tsp vanilla extract
Dry Ingredients:
90 g | ¾ cup all purpose flour
¼ tsp baking soda
