7 ounce pkg elbow macaroni
8 ounce jar processed American cheese
-mild Mexican seasoned or plain 1 1/2 cups fully cooked ham
chopped
8 ounce can crushed pineapple :
drained
1/2 cup chopped green bell pepper
1/4 cup onion -- finley chopped
Cook macaroni according to package directions; drain. Stir in cheese sauce until combined. Add remaining ingredients. Transfer to a serving bowl; serve immediately. Chorizo Mac n Cheese
Per serving (makes 6):
500 Calories
39g Protein
56g Carbs
13g Fat
LOW FAT CHORIZO
Note: this recipe makes 32oz of chorizo, and you only need 16oz for the Mac n Cheese. You can either double the recipe, or keep the rest of the chorizo “marinating” and use it for another meal (I used half for the Mac n cheese, and the other half for the breakfast burrito recipe I posted last week)
Chorizo:
10 dried Guajillo peppers
4 dried pasilla peppers
De-seed and de-stem, soak in hot water for 10-15 minutes until soft
~1/2 cup chile water
2 Tablespoon ground paprika1 tablespoon ground oregano
2 teaspoon ground cumin
2 Tablespoon COARSE Kosher salt*
1.5 teaspoon ground black pepper
5 garlic cloves
1/2 cup apple cider vinegar
32oz 93% ground beef
*if using fine grain salt (table salt), divide quantity in half
High Protein Mac n Cheese:
400g pasta
450g fat free blended cottage cheese
80g low fat cheddar
80g 1% milk
30g cheddar cheese powder*
5g nutritional yeast
BLEND UNTIL SMOOTH
*buy in bulk off of Amazon, or use dried packets from any boxed Mac n cheese
Topping:
80g low fat cheddar
Chopped cilantro garnish

Elbow macaroni – 500 gms
Unsalted butter – 50 gms (about ¼ cup)
All-purpose flour – ¼ cup
Dried thyme – ¼ tsp
Paprika (or Cayenne pepper) – ¼ tsp
Milk – 3 cups, at room temperature
Nutmeg – ⅛ tsp
Worcestershire sauce – ¼ tsp
Cheddar cheese – 3 cups, grated
Mozzarella cheese – 1 cup, grated
Panko breadcrumbs – ½ cup to ¾ cup
Melted butter – 2 tbsp
Salt to taste

Cheesy Macaroni Recipe in Urdu
Ingredients for Boiled Macaroni:
Water 4-5 cups
Salt 1 tbsp
Elbow macaroni 3 cups
Ingredients for Cheesy Masala Macaroni:
Oil 3 tbsp
Garlic (chopped) 1 tbsp
Onion (chopped) 1 cup
Carrot cubes 1 cup
Tomato paste 1/4 cup
Chili sauce 2 tbsp
Red chili flakes 1 tbsp
Black pepper crushed 1 tsp
Red chili powder 1 tbsp
Salt 1 tsp
Milk 2 cups
Boiled macaroni
Capsicum cubes 1 cup
Nurpur Cheddar Cheese (grated) 1 cup
Nurpur Mozzarella Cheese (grated) 1 cup
Green coriander (chopped) for garnishing
Red chili flakes for garnishing
Directions for Boiled Macaroni Preparation:
1. In a pot heat water and add salt. Bring it to a boil.
2. Add macaroni and boil until 80% done. Strain and set aside.
Directions for Cheesy Masala Macaroni Preparation:
3. In a pot heat oil and add garlic. Cook for a minute.
4. Add onion and cook until translucent.
5. Add carrots, tomato paste and cook for a minute. Add chili sauce, red chili flakes, black pepper crushed, red chili powder, salt and mix it well.
6. Add milk and cook for 2-3 mins. Add boiled macaroni, capsicum and cook for 3-4 mins.
7. Add Nurpur Cheddar & Mozzarella Cheese and cook until cheese melts.
8. Dish it out, garnish with green coriander, red chili flakes and serve.
9. Your Cheesy Masala Macaroni is ready. Serve and enjoy.

Cooking time: 20-25 mins
