1 12ounce pasta rotelle cooked,drain,cool
1 cup red Bermuda onion :
diced
1 cup red bell pepper diced
1 8ounce corn, whole kernel, canned :
canned
1 4ounce green chiles diced
1 Tablespoon jalapenos :
diced
1/4 cup cilantro,parsley chopped
1 Tablespoon chili powder
2 teaspoons cumin powder
1 cup Italian salad dressing :
nonfat
In large bowl,combine pasta,onion,red pepper,corn,chilies,jalapenos and cilanto or parsley. In small bowl, wisk together salad dressing, chili powder and cumin. Pour over pasta mixture, tossing to coat well. Chill at least 30 minutes to blend flavors before serving.

KETO ANTIPASTO SALAD
Serves: 8
½ cup olive oil
¼ cup red wine vinegar
1 tablespoon dijon mustard
½ teaspoon oregano
¼ teaspoon red pepper flakes
pinch of salt
5 oz salami
5 oz pepperoni
4 oz smoked gouda
8 oz mozzarella cheese
7 oz artichoke hearts
4 oz grape tomatoes
¼ cup roasted red pepper
½ cup olives, chopped
bundle of asparagus
1️⃣ Mix dressing ingredients together and set aside.
2️⃣ Prepare the asparagus by tossing the asparagus in olive oil and salt & pepper in a ziplock bag. Spread on a baking tray and bake or grill at 350 for 15 minutes. Set aside to cool.
3️⃣ Prepare the salad ingredients and mix together in a bowl. Add dressing. Stir to combine.

KETO MACARONI SALAD
Serves: 8
1 package lupin pasta (linked above)
½ cup mayonnaise
3 tablespoon sour cream
1 ½ tablespoon apple cider vinegar
1 tablespoon dijon mustard
Juice from ½ lemon
1 ½ teaspoon Lakanto monkfruit sweetener
1 cup diced celery
¼ cup diced red onion
¼ cup diced green bell pepper
¼ cup quartered grape tomatoes
1 tablespoon minced parsley
1️⃣ Prepare pasta according to package directions.
2️⃣ In a small bowl, mix together mayonnaise, sour cream, apple cider vinegar, mustard, salt, monkfruit, and lemon juice. Set aside.
3️⃣ In a large bowl, add pasta, celery, red onion, bell pepper, tomatoes and parsley. Mix in the dressing. Stir to combine.

Sunflower Seed Pasta Salad (with Chicken)
Delicious and easy pasta salad.
Dressing:
1/2 cup mayo
1/4 cup Ranch dressing
2 tsp red wine vinegar
3 tbsp milk
1 tbsp minced dry onion (or use a couple of tbsp of minced fresh onion)
1/4 tsp mustard
1/4 tsp garlic powder
1/4 tsp parsley (or 1 tbsp fresh, finely chopped)
1/4 tsp pepper
1/2 tsp salt (to taste)
Main part of salad
1 cup of uncooked pasta, cooked drained and rinsed in cold water, drain
3/4 cup broccoli florets
1/2 cup cubed cheese
1/4 cup chopped celery
1/4 cup chopped cucumber
1/4 cup finely chopped carrot
1/4 cup shelled sunflower seeds (I used the salted kind because that's all I could find)
Add or remove any veggie that you would like in this
1 cup diced cooked chicken (optional)
2 boiled eggs chopped (optional)
