How to make Fettuccine Alfredo
Prep time: 40 minutes
Cook time: 40-50 minutes
Ingredients for Alfredo Sauce
-2 cartons of 18% table cream (4-6 servings) you can use 11/2 if preferred. I like a lot of cream because once its thickened a little the pasta soaks up the sauce so I like to add more
-1 packed cooked ham or 200 grams (cut into small pieces)
-2 tablespoons of butter or margarine
-2 cups of Parmesan cheese
-3/4 of a cup of fresh parsley
-pinch of salt/pepper
Side note:
cook your diced ham in a pan with no added oil for about 5 minutes.
Alfredo Sauce Prep:
In a small pot, melt butter, then add your 18% table cream, diced ham that was cooked before, fresh parley, cheese salt and pepper. Use a whisk to help dissolve the cheese into the Alfredo sauce. Keep at medium heat and stir frequently so the cream doesn't burn at bottom of the pan. Cook for 30-40 minutes or desired thickness.
In a larger pot add your salted water and oil to prevent fettuccine from sticking together, once it boils add your Fettuccine Pasta. I used 900 grams because we had left overs the next day, and also depends how many people will be joining you for dinner.
Once fettuccine is at your desired cook time, drain then put back into pot, add your Alfredo sauce and mix all together. In a serving dish put fettuccine, add Alfredo sauce on top and a little Parmesan cheese and lastly, your fresh parsley for garnish....and ENJOY!!
This is one of my favourite dishes I like to make..... my friends every time they come over this is their only request for dinner. You can add chicken, mushrooms, broccoli, shrimp but because the cream itself is heavy we prefer NOT to have anything else other than cooked ham. I hope you enjoyed my video

Those recipes that I can cook for Luca and with few adjustments here and there are perfect for the rest of the family (me&Albert), are definitely my favorites :-)
I do not have to prepare two different things (you know, time is always a challenge) and, more important, when Luca looks at my plate and finds exactly the same food that is in his plate...he's happier and he eats everything!
Another reason why I like this recipe? Luca LOVES helping me shelling sweet peas...and eating them meanwhile :-)

I'm sure that everyone will love today's recipe, since it's a rich first course, tasty and easy to make: pasta with ham, peas and cream. Let's see how to do! We'll need:
• 14 oz (400 g) of short pasta
• just over 1 cup (150 g) of frozen peas
• 4,2 oz (120 g) of ham
• just under ½ cup (100 ml) of heavy cream • 1 pinch of nutmeg / pepper to taste / salt
• 1/3 stick (40 g) of butter
• 2 tbsp of extra virgin olive oil
Heat 2 tablespoons of olive oil in a pan, then add the peas. Stir well, add a bit of hot water, cover with a lid and cook on a low flame.
Melt the butter in a non-stick pan, add the diced ham and let it brown. Then add the cream, the ground pepper, the nutmeg, finally the peas and salt to taste.
Boil the pasta and drain al dente, then toss in the pan with the sauce.
