INGREDIENTS WITH GRAM AMOUNTS
1 6-pound (2800g) Prime rib or beef rib roast - rib bones removed and tied back up (ask the butcher)
3 tablespoons (30g) Diamond Kosher salt or 2 tablespoons (30g) Morton's Kosher salt
1 tablespoon (6g) coarse black pepper
For the au jus
3 tablespoons (40g) olive oil
3 pounds (1360g) oxtails, neck bones, meaty beef bones
1 teaspoon beef base - see notes in print recipe
6 cups low-sodium beef stock
1/2 cup (120g) dry red wine
5 cloves garlic
2 large carrots - chopped
3 ribs celery - chopped
1 large onion - chopped
1 tablespoon (13g) tomato paste
2 sprigs thyme
1 large bay leaf
salt and pepper - to taste

Pot roast has to be one of our families favorite meals. It is probably one of the easiest dishes to make, yet feels like you've been hard at work all day in the kitchen. It is hearty, filling and especially perfect for those cold winter days.
Pot roast can be prepared in many different ways, but ever since getting my very own Instant Pot in the fall of '17, I've easily found my favorite way. It's fast, simple AND best of all, the meat is fall apart tender. This is especially important for our family, because we buy grass fed/grass finished beef. These calves aren't fattened on GMO grain, which makes it a little leaner. But, when cooking it this way, it's not the least bit tough! It's just as tender as the store-bought beef.
We love to serve ours alongside a steaming hot bowl of garlic mashed potatoes, and a little homemade sauerkraut.
How to Cook a Roast in the Instant Pot Ingredients
2.5- 3 lb roast
3 tablespoons butter
5 or 6 whole carrots- cut in large chunks
2 medium onions- peeled and cut in half
1 teaspoon salt
1/2 teaspoon garlic powder
Several grindings of fresh black pepper
2 cups water
How to Cook a Roast in the Instant Pot Instructions
Brown the veggies and sear the meat
The first step is to get the veggies browned and the meat seared. This just adds extra flavor to the veggies and locks all of the delicious-ness inside the meat.
To do this, press the sauté button on your Instant Pot. Allow it to get really hot. This will take a few minutes. Meanwhile, peel your onions and cut them in half, and chop the carrots into large chunks.
Add two tablespoons of butter into the Instant Pot, and place the onions and carrots into the hot butter. Allow them to cook until the have a nice browned color on them. Once all the veggies have been browned a little, set them aside in a separate bowl.
Next, give your roast a little rinse in cold water and pat dry. Add the remaining tablespoon of butter to the Instant Pot, and then add the meat. Give it a few minutes on all sides, to get some nice browned color on it. Searing meat helps it to keep all the flavor inside during the duration of the cooking process.
Once the meat is seared, add the veggies back on top and around it. Add in two cups of filtered water.
Set the Instant Pot to high pressure, and allow it to cook for 60 minutes. Make sure that you have the little knob at the top set to sealing, as opposed to venting.
When the 60 minutes is up, release the pressure. Allow the meat to rest for a few minutes before serving.
Make ahead Roast in the Instant Pot
Going to be out all afternoon and need a good meal when you get back in? Roast is the perfect solution for that! Follow the steps above, but skip the releasing the pressure part. Instead, just allow the Instant Pot to automatically go to warm. It can slow cook and the warm setting for several hours. When you are finally ready to eat, the pressure will already be released. The Instant Pot will slowly let it out, as it sits on the warm setting.
If you are doing it this way, there is no need to let the meat rest. Just dig in!
How do you cook a roast in an Instant Pot?
Chop two medium onions in half, and slice 5-6 carrots.
Set the Instant Pot to the sauté function, and add a little butter.
When the Instant Pot is hot, add the veggies to brown them.
Remove the vegetables, and set aside.
Sear the meat on all sides, in a little butter, in the hot Instant Pot.
Add the veggies back in, along with salt, pepper and garlic powder.
Add 2 cups water.
Cook on high pressure for one hour

3 - 4 lb chuck roast
2 tbs avocado oil
1 whole onion (Quartered or halved)
4 Carrots (chopped)
4 celery stalks (chopped)
1 lb red potatoes chopped
1 cup red wine (dry)
3 cups beef broth
1-2 tbsp tomato paste
1-2 tbs beef base better than bouillon
2 sprigs rosemary
1 bunch of thyme
2 bay leaves
Flour to coat roast (optional)
3 cloves of garlic (minced) or whole garlic bulb
Salt, pepper, garlic, onion powder
Slurry - 2 tbsp corn starch + 1/4 cup water (2:1 ratio - you can adjust based on desired gravy thickness)
Directions:
Preheat oven to 325.
Generously season your chuck roast with salt, pepper, onion powder, and garlic powder. Allow it to come up to room temperature and apply a thin layer of flour to all sides (optional). Heat Oil in a large pot or dutch oven. Get the pot very hot to sear your beef. Sear on both sides for about 3-5 minutes per side or until nice crust is formed. Remove the roast and add your onions and garlic and then your wine. Reduce the wine by half and add your tomato paste and beef base. Now place the chuck roast on top of the onions. Add 3 cups beef stock and top with fresh herbs and cover. Place in oven for 2 hours and then add in your vegetables for the last hour. After about 3 hours total, your roast should shred easily with a fork. (During the final 30 minutes, you can remove the lid and cook - this helps reduce the gravy and brown the roast a bit) Serve with rice, potatoes, or cauliflower mash. Garnish with chopped parsley.
