8 oz Can tomato sauce
2 Cooked chicken

Prepare tortillas-two per serving-as you do for soft tacos. On tortilla place pieces of shredded chicken breast and some cut up green chiles. Roll up and place folded side down on serving plate. Spoon hot tomato sauce over enchiladas and top with sour cream. These CHEESE ENCHILADAS are neither genuine Mexican nor totally Texan, they are TexMex style, these corn tortillas are stuffed with cheese and smothered in a delicious homemade sauce made with the best seasonings, then topped with a fresh Pico de Gallo and sides with refried beans and Mexican rice, it is a very easy and quick meal to prepare.
INGREDIENTS
2 Tbls melted butter
1 Tbsp vegetable oil
3 Tbsp All purpose flour
1 & 1/2 Tbsp chili powder (I like Gebhardt)
2 tsp Paprika
1 tsp onion powder
2 tsp garlic powder
1 tsp ground cumin
1/2 tsp oregano
3 C. chicken broth
2 tsp tomato paste
1 & 1/2 tsp chicken bouillon
1/2 tsp sugar
Salt if needed
Corn tortillas
American cheese (grated as needed) I used about 3/4 lb. but you use as needed for you.
chopped Onions for filling (optional)

1 C. chopped onions

Did Scoop Eats Just Find The Best Enchiladas in Texas?
SAN ANTONIO – Scoop Eats has moved East from the Golden State of California to the Lone Star State of Texas as attention shifts from the Rose Bowl to the All-American Game.
That does not mean that we still don't have our ample appetites for good food and while Tom Orr and Tony Gerdeman are back in the Buckeye State, we ran into Marc Givler in San Antonio for the week of coverage that gets underway on Tuesday morning with the nation's top high school players converging on their all-star game with a mixture of committed and uncommitted recruits for the Buckeyes.
As we got into town the idea immediately came to our minds that a good Tex Mex meal would be in order and members from the Ask The Insiders Forum over on BuckeyeScoop had no shortage of ideas of places to go.
The Original Blanco Café does not look like much from the outside, a red awning, a small logo and a pretty plain front hide some of the best Tex Mex cuisine around town. This place is known for its enchiliadas, a meal that many places do but few do correctly.
We had the debate on Monday morning about what makes a cheese enchilada so good. Some people don't see the perfection in the simplicity of the meal but once they have one that is done correctly, their world view changes.
And this is a place that has the chance to make an early mark in our race for the top meal during this trip to San Antonio, right out of the gate.
