Enchilada Pie Hacks | Quarantine Recipe | Enchilada Pie Recipe
While on quarantine, I've been able to help mom out in the kitchen more. I really like her enchilada pie recipe so I can't wait to show you our enchilada pie hacks that my grandma taught us.
Hack #1: Use only one can of enchilada sauce, add another can of water then season it up! If the sauce is too thick, it makes it harder for the corn tortillas to absorb the liquid and they turn out sticky. You could add a pack of enchilada seasoning but we like to season it up ourselves.
Hack #2: We use a bowl, not a pan! Because...
Hack #3: We use the microwave to cook it up. This makes it cook much faster AND it's perfect for the summer when you don't want the oven to heat up your whole house. All of the ingredients are fully cooked so you only need to heat up the sauce just enough to absorb into the tortillas. We usually do 8 minutes split in 4 minute sessions. The more layers you add, the longer it will take to get the tortillas in the center soft. (Note: If you get to the center and the tortillas are still a bit tough, just throw it back in the microwave for 4 more minutes! Ya know, throw it back again ????????)
Hack #4: I'm super cheesy and I need cheese in every bite so I prefer to add the cheese on my plate, not inside the pie.

BEEF ENCHILADA CASSEROLE how to make / with homemade ENCHILADA SAUCE ❤
This is a modern version of enchiladas, BEEF ENCHILADA CASSEROLE is a meal in itself, I serve it with the traditional refried beans and mexican rice or with a simple salad and avocado, and you can't forget the sour cream...the key ingredient for enchiladas is the rich flavor of the chili powder, paprika, and corn tortillas, and it's so much quicker in a no roll casserole. BEEF ENCHILADA CASSEROLE can be made the day before then refrigerated until ready to use and it will definitely be a hit in your home.
● CHECK CASSEROLE IN THE OVEN AFTER 25 MINUTES , IF BUBBLY, ITS READY OR LEAVE IT A LITTLE LONGER. (REMOVE FROM OVEN WHEN BUBBLY)
MEAT INGREDIENTS
1 LB. 80/20 ground beef (drained)
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp pepper
1 tsp salt
2 TBSP canned green chilies
ENCHILADA SAUCE
3 Tbsp melted butter (unsalted butter) (you can add little bit more if needed)
3 Tbsp All purpose flour
2 1/2 Tbsp chili powder (I used Gebhardts)
1 Tbsp paprika
3 C. Chicken Broth (low sodium)
2 tsp garlic powder 1 tsp onion powder
1 tsp ground cumin
2 tsp tomato paste
1 tsp chicken bouillon (you can add more if you like)
1 tsp oregano
1/2 tsp sugar
1/2 tsp pepper (you decide)
TASTE AND ADJUST
TORTILLAS
3/4 C. vegetable oil
12 corn tortillas (depending on your casserole size)
ADDITIONAL INGREDIENTS
3 C. Colby Jack Cheese (freshly grated)
Finely chopped onions (to your liking)
Sour Cream (to your liking)

✅ to make this casserole in under 30 minutes, cook the chiles and tortillas while waiting for the meat, this is how I usually cook???? I have all 4 burners going at once ☺️
✅ if you don’t want to lightly fry tortilla skip that step,
✅try it with flour tortillas ????
Ingredients: 6-9 servings depending on how big you cut them
9x13 baking dish I used 18 tortillas
For the picadillo-
2 lbs ground beef I’m using 97/3
1/2 diced onion
1 small bell pepper or 2 jalapeños
3 minced garlic cloves
2 tsp ground cumin
2 tsp ground black pepper
2 tsp oregano
Salt I used 4 tsp
2 small potatoes
2 small carrots
2 roma tomatoes
For the enchilada sauce
8 New Mexico or guajillo Chile pods
2 chile anchos
5 chile árbol (optional)
1/4 onion
3 garlic cloves
1 tsp oregano
1 tsp ground black pepper
1/2 tsp ground cumin
Salt I used 1 1/2 tsp
4 cups beef broth or water
3 tbsp butter
3 tbsp APF

1- pound ground turkey or (ground beef)

1- red and yellow chopped pepper
1- cup roma tomato
