1/2 c Black peppercorns
4 Emu steaks; 4oz each
1/4 c Oil
1/3 c Cognac
1 c Heavy cream
2 tb Cognac
Salt to taste 1. Place peppercorns in press-closure baggie. Crush with a hammer.
Lightly coat both sides of steaks with peppercorns. 2. Heat oil in large skillet. Saute steaks over medium-high heat
until rare or medium rare (3-4 minutes per side). Remove from pan and discard oil. 3. Return steaks to pan, add 1/3 cup cognac. Cook over high heat until
cognac is reduced to about 3 tablespoons. Remove steaks to serving platter and keep warm. Add cream to pan; cook and stir over high heat until cream boils and thickens. Add 2 teaspoons cognac and salt. Spoon sauce over steaks and serve. How to make Bak Kwa
Ingredients
700 grams of minced beef or pork
Marinate
11/2 tbsp fish sauce
11/2 tbsp soya sauce
1 cup of coarse sugar
1/4 tsp of 5 spiced powder
1/2 tsp of cinnamon powder
1/2 tsp of corriander powder
1/2 tsp of white pepper
1 tbsp of hua tiao wine
1 tsp of dark soya sauce
Method:
1. Mix all the marinate ingredients except for the pork in a large bowl. Add the minced meat and marinate for at least 1 hours (or overnight if you wish).
2. Preheat the oven to 180 Degree C.
3. Spread the marinated minced meat on a baking paper thinly using plastic & rolling pin. approximately 0.4 - 0.5cm or thinner. I prefer thinner. Trim the excess edges with a knife.
4. Bake the meat in 180 degree C for 20 - 30 mins. Notice the meat will shrink slightly away from the edges of the baking trays. Remove carefully from the trays and cut into smaller squares or rectangles as you wish (I used scissors). Glaze the thinly cut bak kwa with mixture of honey & water on both sides.
6. Grill the bak kwa on a grill pan or on a BBQ pit, about 3minutes on each side. It should sizzle and caramelise nicely; make sure the edges do not become charred.

- pork tenderloin 500 grams, cheese 100 grams, bacon 100 grams, puff pastry, 2 egg yolks, ground black pepper 0.5 teaspoon, salt 1 teaspoon, spices for meat 0.5 teaspoon, cumin 0.5 teaspoon.
RECIPE :
- salt 1 teaspoon.
- ground pepper 0.5 teaspoon, spices for meat 0.5 teaspoon
spoons, cumin 0.5 teaspoon.
- grate with spices on both sides.
- cheese 100 grams.
- fry the pork on each side.
- bacon 100 grams (6-7 slices).
- wrap in dough and close the edges tightly.
- grease with egg yolk.
- pierce with a toothpick to release steam.
- cover with foil, bake for 60 minutes at 180 C.
- remove the foil and bake for 15 minutes at 180C.
- if you like fried meat, then bake in the oven for 90 minutes at 180C.

✅Ingredients
• 1 broccoli head
• 120 ml olive oil in a bowl
• 80ml salted soy sauce
• 1 tablespoon hot chili sauce
• 600g steak of your choice (Rig eye or sirloin)
• 60g butter
• 2 tablespoons olive oil
• 1 teaspoon smoked paprika
• freshly cracked black pepper
• Juice of a half lemon
• 100ml beef broth
• chopped parsley
✅Instructions
• Cut broccoli head into florets
• Cook it in boiling water for 4-5 minutes
• Rinse with cold water and keep aside for later
• prepare the marinade, Add 120 ml of olive oil to a bowl
• add 80ml of salted soy sauce
• Mix it well
• Slice the steak into 1-2cm strips
• Add the steak strips to the marinade
• keep it in the refrigerator for 30-60 mins
• Cook the steak strips for 4-5 minutes on each side until the edges are brown
• Remove the steak strips and set aside
• Add the broccoli boiled previously to the skillet
• Cook it over medium heat for 5mins
• Add the steak strips back to the skillet to reheat it to serve it
