How To make Eggplant with Tomato Tapenade
NORMA WRENN NPXR56B:
2 md Eggplants
1/4 c WESSON Oil
1 ts Garlic powder
3/4 c Tomato Tapenade; divided
3/4 c SARGENTO Fancy Supreme
Shredded Parmesan Cheese -divided -TOMATO TAPENDADE 3 oz Package dried tomatoes
2 c -water
2 tb Wesson oil
2 Cloves garlic; minced
1 ts Grated lemon rind
1 ts Lemon juice
1 ts Dried whole basil
1/2 ts Ground pepper
1/4 c Ripe olives; sliced
1 tb Drained capers
Trim ends from eggplant; cut crosswise into sixteen 1/2-inch-thick slices. Arrange slices on a greased
baking sheet; brush both sides with oil, and sprinkle with garlic salt. Bake at 400~ for 8 minutes; turn eggplant, and bake an additional 5 minutes. Spread 1 tb Tomato Tapenade on each slice; sprinkle with 1 tablespoon cheese. Bake an additional 2 minutes. Tomato Tapenade Combine tomatoes and water in a small saucepan; bring to a boil. Cover; reduce heat, and simmer 10 minutes or until tender. Drain well; pat dry with paper towels. Combine tomatoes, oil and remaining ingredients in a food processor or electric blender. Top with cover and process until coarsely pureed. Yield: about 1-1/3 cups. (wrv)

Is there anything better than garlicky roasted eggplant in the summer? I personally love eggplant and it’s one of my favourite vegetables. Beautifully caramelized, sweet, and so easy to make. This Roasted Garlic Eggplant with Yogurt Dip recipe can be used for spreads, or enjoyed on its own with refreshing yogurt dips. It is perfect to make on the grill or in the oven which is my preferred method. I hope you give this recipe a try and please let me know what you think in the comments or how you made it differently.
INGREDIENTS:
The Eggplant:
3 small eggplants cut in half mine were palm size
drizzle of olive oil for the eggplant + sprinkle of salt on each one
The Garlic Oil:
1 tablespoon olive oil
1-2 minced garlic cloves depending on how garlicky you like it
2 basil leaves ripped, finely chopped, or sliced
The Yogurt Dip:
½ cup plain yogurt any you like
salt to taste
tablespoon of lemon juice or to taste
teaspoon of olive oil
tablespoon finely chopped fresh dill or 1/2 a teaspoon of dry dill weed

Everybody’s favorite Eggplant salad ????
Eggplant salad that everyone loves
I prepare it for almost every hospitality. An excellent addition to a sandwich. As usual, the recipe requires minimal effort and the result is impressive!
eggplant salad
???? 2 eggplants
???? 3 tomatoes
???? 3 cloves of garlic
???? Dill, a third of a bunch
???? Scrambled egg with salt
????Frying oil
???? Salt, pepper
Slice eggplant into 1 cm thick circles. Salt generously and leave aside for 10 minutes. After 10 minutes, wash and dry with a paper towel.
Dip in a beaten egg and fry in oil on both sides until brown.
Prepare the sauce:
Cut tomatoes into rough pieces and put in a food processor with garlic, dill, salt and pepper. Crush into a mixture of thick paste when there are still small pieces of garlic, tomato.
Arrange a layer of eggplants on the serving plate, spread paste on each circle, arrange another layer on top and repeat the operation. If there is any paste left, spread it on top and garnish with dill.
I recommend letting the salad absorb the flavors and stand for an hour or two before serving (in the fridge or outside)

???? Baked Eggplant Ingredients:
1 Large (7oz or 500g) Eggplant
3 Tablespoons Olive Oil
1 Teaspoon Salt
5 Tablespoons Basil Pesto
7 oz (196g) Tomatoes
6 oz (170g) Mozzarella Cheese
4 Tablespoons Bread Crumbs
1 Garlic Clove
1 Tablespoon Chopped Parsley
4 Tablespoons Parmesan Cheese
???? Baked Eggplant Instructions:
1. Preheat the oven at 356F (180C).
2. Cut the eggplant into 1/8 inch lengthwise. Drizzle olive oil on a large baking sheet lined with parchment paper. Place the sliced eggplants, season with salt and drizzle more olive oil on top.
3. Bake for 10-15 minutes.
4. Spread basil pesto on baked eggplants.
5. In a shallow dish, stir together bread crumbs, minced garlic, chopped parsley and parmesan cheese. Add in chopped tomatoes and mozzarella cheese and mix to combine. Add the mixture on top of basil pesto sauce.
6. Bake in the preheated oven at 356F (180C) for 15-20 minutes.
