Hey folks! Tonight for tea I made this wonderful beef & vegetable pie :) This is so easy to make, and even easier if you use pre made/shop bought pastry. I wanted shortcrust pastry for the bottom of the pie and couldn’t find any in local supermarket…so I’ve made my own because I have plenty of flour :) Absolutely delicious with mashed potato & gravy! Or try it with a few chips…like we did.
Everything I used will be listed below.

Makes one 23cm pie or 4 small individual pies
Filling -
450g (1 pound) Best quality beef steak minced beef or ground beef
1 Medium onion - Finely diced
1 Large or 2 small carrots - diced
130g (1 cup) frozen peas
1 Beef OXO cube or similar beef bullion cube
1/2 pint (1.2 cups) Beef stock
Optional Worcestershire sauce
1 Tablespoon plain or all purpose flour
Pastry -
300g (2 1/2 cups) Plain or all purpose flour
1 Tablespoon salt
150g (5.2 oz) Very cold butter
4-5 Tablespoons very cold water
1 Beaten egg or milk to glaze

Easy Mince Pies Recipe - A Homemade English Christmas
In our fifth and final day of A Homemade English Christmas, I bake mince pies for Santa Claus (and inevitably any member of my family who happens to walk past them in the 17th Century Hall at Mapperton).
Here's the recipe for the pastry:
- 125g cold butter, cubed
- 50g icing sugar (plus a bit for dusting)
- orange zest
- 1/2 teaspoon vanilla extract
- one egg
- 250g plain flour
And for those who are curious, a pound coin is 0.28cm thick!
And here is the recipe for the vegetarian mincemeat:
I found using this recipe online
Ingredients
175 g currants
175 g raisins
175 g sultanas
175 g dried cranberries
100 g mixed peel
120 g butter cubed
220 g light brown soft sugar
50 g almonds chopped
1 large bramley apple peeled, cored and grated
1 ½ tsp mixed spice
½ tsp cinnamon
½ tsp ground ginger
⅛ tsp ground cloves
1 orange finely grated zest and juice
200 ml ruby port
Instructions
Sterilise 4 370g jars and lids (or 5 slightly smaller ones) by washing in hot soapy water, rinsing well then placing them in a low oven until dry.
Place all of the ingredients apart from the port into a large pan, heat gently, stirring, until the butter has melted then simmer very gently, stirring occasionally, for about 10 minutes.
Remove from the heat and leave to cool until just warm then stir in the port. Divide the mincemeat between the sterilised jars, seal, and store in a cool place for up to six months.

Sweet short mincemeat pies
How to Recipe mincemeat link :
Makes 12
Recipe Ingredients:
white Flour plan 400 grams
water 50 grams
castor sugar 100 grams
butter or marg 100 grams
white shorting 100 grams
sweet mincemeat about 600 grams
Method:
Preheat the oven to 380 F – 400 f / fan 190 - 210 C
Sieve flour into a bowl, Add the fat into the flour & work the fat into the flour to make a nice fine crumb, make a well in the middle & add in the water & sugar mixture, mix lightly into a pastry, not a bread dough finish on the table, shape into a ball, roll out with rolling pin to about 3 - 4 mm, Using a knife under the pastry to remove from table, you are ready to cut out the bases 750 mm cutter, best to use Yorkshire pudding tray, Spray your tray with some oil, and now pop in the pastry part fill up with homemade or bought sweet mincemeat, and then roll out the pastry for the lids & cut out with a 650 mm cutter Now ready for baking
Now bake at 380 - 400 f or fan 200 - 210 c for about 15 -20 min, golden brown
