How To make Mince Meat Cookies
1 c Shortening
2 c Sugar
3 Eggs; well beaten
4 c Cake flour; (4 to 4 1/2)
4 ts Baking powder
1/2 ts Salt
2 tb Milk
Filling: 1/2 c Mince-meat
1/2 c Sugar
1/3 c Water
Cream shortening and sugar. Add eggs and milk. Sift flour,measure, and sift with baking powder and salt. Add to creamed shortening and sugar. Mix thoroughly. Chill 2 hours. Turn onto lightly floured board. Roll in sheet 1/8 inch thick. Cut with floured cutter. Filling: Cook mince-meat, sugar, and water together 10 minutes. Cool. Place 1 teaspoon filling between 2 cookies. Press edges together. Bake in hot oven (425 F) 10 minutes. 36 servings.

Oh hi there! You must be wondering what else you can make with all that delicious mince meat you made a couple of weeks ago. Well behold, The Mince Pie Cupcake. A Christmas Crumbs & Doilies classic! And hopefully it will become one of your favourites!
For the pastry stars
110g plain flour
50g cold butter
Pinch of salt
1 tbs cold water
Demerara sugar and an egg
For the cupcakes
125g self raising flour
125g caster sugar
2 tsp mixed spice
1/4 tsp ground ginger
1/4 tsp bicarbonate of soda
65g caster sugar
60 light soft brown sugar
75g mince meat
3 tbsp brandy-soaked currants
100g browned butter, left to cool completely
40g soft butter
2 lg eggs
1.5 tbsp milk
For the buttercream
150g soft butter
340g icing sugar, sifted
Zest of an orange
2 tbsp brandy
2 tbsp orange juice

You will Need
250g /8oz of Plain /All Purpose Flour
125g /4oz of Soft Butter
50g /2oz of Castor / Fine Sugar
2 Egg Yolks
4 tablespoons of Ice cold water
12 Heaped Teaspoons of Mincemeat
Egg white to Glaze the pies
A small amount of Fine Sugar to Decorate
Oven Temperature - 150'C / 300’F

Note: The amount of water used varies depending on the humidity of where you live. You can also bake them as well.

And to be honest its given us 7 years to perfect this Mince Pie recipe with its orange, spiced shortcrust pastry and home made mincemeat. To us, nothing says Christmas vibes better than a warm mince pie (and possibly a hot Mulled Wine ;) )

For the Orange and Spice Shortcrust Pastry:
Preheat Oven to 170C fan assisted (190C non fan)
225g Plain Flour
2 tbsp Icing Sugar
150g Cold Unsalted Butter
Pinch of Salt
3 tbsp ice-cold Water
Zest of 1/2 orange
1/2 tsp Cinnamon
For the Mince Pie Filling
125g Raisins
125g Sultanas
65g Candied Orange Peel
25g Stem Ginger
100g Bramley Apple
125g Suet
85g Demerara Sugar
25g Dark Muscovado Sugar
1/2 tsp Cinnamon
1/2 tsp Mixed Spice
110ml Brandy/Amaretto
