Skinny Cheddar Dill Biscuits Recipe | Lighter Biscuits
These Skinny Cheddar Dill Biscuits have a ton of flavor, and are on the lighter side!
Ingredients:
10 oz all purpose flour (2 cups)
4 tsp baking powder
2 tsp sugar
1 tsp garlic powder
1/2 tsp old bay seasoning
1/2 tsp salt
6 oz extra sharp cheddar, grated
2 tbsp chopped fresh dill (or chives, or scallions)
1 cup milk (may need to add an additional 1/4 cup)
Directions:
Preheat the oven to 450 degrees F.
In a food processor, pulse to combine the flour, baking powder, sugar, garlic powder, old bay seasoning, and salt. Once those ingredients are combined, add the grated cheddar and dill to the bowl and pulse 2-3 times to distribute. Dump everything out into a large mixing bowl. Pour the milk into the dry ingredients and use a spatula to toss the ingredients around. Think of this more as tossing to distribute the liquid, rather than stirring. In order to prevent our biscuits from getting tough, we want to use a light hand and only mix until the dry and wet ingredients are combined. If the dough is too dry, add 1/4 cup additional milk. All the flour should be moistened, and the dough should be sticky.
Take a cookie scoop and portion out 1/4 cup scoops of the biscuit mixture onto a baking sheet (you should have 12 scoops). Bake for 15 minutes until golden brown. Enjoy!

Joanne created Fifteen Spatulas to show people the cooking from scratch isn't as intimidating as they might think. On the blog you'll find recipes with step-by-step photos and explanations of the how's and why's of cooking (like why patting a steak dry before searing is so important, or how the hardness of your tap water can affect the strength of your bread dough). Happy cooking!

Pampushki, Ukrainian/Russian dinner rolls with garlic and dill. Perfect with Borscht!
Pampushka is a small savory or sweet yeast-raised bun or doughnut typical for Russian/Ukrainian cuisine. Often served with Borscht or other soups.
Origin: Ukraine. Pampushka has a very fluffy texture and topped with garlic and dill. My childhood's favorite!
PAMPUSHKI RECIPE
Ingredients for dough:
300g(2½ cups)plain flour
150ml(½ cup)warm water
2 tsp active dry yeast
½(1) tsp salt
2 tsp sugar
1 egg
3 tbsp vegetable oil
Method:
In a large mixing bowl, combine: warm water, sugar and yeast, mix.
Add an egg and mix.
Add salt and vegetable Oil( I am using avocado oil), mix.
Add about 2/3 of all required flour and mix into thick paste.
Add remaining flour and form the dough.
Transfer onto table surface and knead until smooth in texture(about 5 minutes).
Oil mixing bowl and place dough in it.
Cover and let proof for 1 hour in warm place.
Make topping for Pampushki.
Pampushki topping:
3 cloves garlic(minced)
1 bunch dill(chopped)
2 tbsp vegetable oil( I am using avocado oil)
1 tbsp water
1 tbsp Maldon salt(for sprinkling after)
Mix all ingredients together and set aside.
When the dough has proofed, cut in half.
Roll each half into a snake about 1½ inch in diameter and cut into small pieces(about 30g each). Roll each piece into a ball and set them into a baking dish(close to each other). Oil dish first with 1 tbsp of vegetable oil.
Cover and set for second proof for 20 minutes.
Brush with bitten egg and bake at 360°F(180°C) for 25 minutes, or until golden brown.
While hot, spoon out topping and sprinkle with Maldon salt.
Enjoy with Borscht!
