Did you know that there is a town in Georgia called Vidalia? They have an onion festival every year. It was fun to visit this town who’s become famous for growing those sweet and delicious onions. Oh, and by the way… I used to call the onions vidalia but now I know it is pronounced vidai. The soil in parts of Georgia and South Carolina is perfect for growing these onions so I know all my neighbors will love to have this recipe as they harvest the dozens of onions from their gardens. Ok let’s start making this recipe- You will need: 1 medium Vidalia onion; ½ cup plain breadcrumbs; 1 teaspoon garlic powder, 1 teaspoon oregano, ; 1 teaspoon smoked paprika ; 2 eggs, beaten and vegetable cooking spray. First, cover a baking sheet with foil and spray with vegetable cooking spray. Preheat oven to 375 degrees. Slice the onions into a ring shape as best as possible. Place the seasoned breadcrumbs and smoked paprika in a bowl and stir. Next, crack two eggs in a second bowl and beat the eggs. I like lining this up like an assembly line with the onions first, then the beaten egg bowl and then the breadcrumbs. Dip the onion rings in the egg and then in the breadcrumbs to coat the rings. Place the rings on the baking sheet. Once all the rings are on the baking sheet, place in the over for 15 minutes or until brown and crispy. This recipe makes 4 servings, and each serving is 101 calories; 13 grams carbohydrate; 2 grams fiber; 7 grams protein; 3 grams fat and 109 milligrams sodium. Oh yeah…..easy on the ketchup. A tablespoon of ketchup will add 5 or more grams of carb. My husband Tony uses cocktail sauce instead which purely by accident (he likes the horseradish) has about half the carbs per volume as ketchup. There you have it, delicious, crunchy onion rings that are low in fat! Until next time, cheers to your health! Oh yum!!
