How To make Dhal Recipe
1 Onion, diced
1 2 cloves garlic, minced
1 t Ground turmeric
1 1/2 t Ground cumin
1 t Ginger root, finely grated
1/4 t Ground cardamom
ADD:
1 c Dried lentils or split peas
(if using split peas soak Overnight) 3 c Hot water
1 t Salt
Saute in water or broth the onion, garlic and spices. Add the lentils, hot water and salt. Bring to a boil. Reduce heat, cover, and simmer until lentils are tender, about 45 minutes. Remove cover and simmer over very low heat, stirring frequently, about 20 more minutes, until lentils are mushy and thick, about the consistency of refried beans. Dal fry is a popular Indian dal or lentil recipe. This is very easy and basic recipe. It is prepared using tur or tuval dal. But you also can use moong or masoor dal for this recipe. You can make this dal thcik or medium consistency according to your taste. Let’s learn to make dal fry and dal fry tadka.
Ingredients:
• 1 cup Tur dal
• 2 cups Water
• 1/4 tdp Turmeric powder
• A pinch of Hing / Asafoetida
• 3 tsp Butter
• 1 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• 1 cup Finely chopped Onion
• 2 medium size finely chopped Tomatoes
• 2 Green chilies
• 1 1/2 tsp Coriander powder
• 1 tsp Red chili powder
• 1 tsp Garam masala (Kitchen king masala)
• Curry leaves
• 2 tsp Garlic paste
• Salt to taste
• 1 tsp Kasuri methi (optional)
For Tadka:
• 1 tsp Ghee
• 3~4 Minced Garlic cloves
• 3~4 Diced Red chilies.
Method:
• Take dal in a bowl and wash it really good 2-3 times with water.
• Transfer the washed dal in cooker and add water.
• Add turmeric powder, hing and mix well.
• Close the lid and cook on medium heat until 4 whistles.
• Open the lid and beat the dal really good with beater. Keep it
aside.
• Heat up butter in a pan. You can use ghee or oil instead of butter.
• When butter is a little hot, add mustard seeds and let them pop
up.
• Add cumin seeds and let them splutter.
• Add finely chopped onion and fry until it turns golden.
• Add finely chopped tomato, green chilies, coriander powder, red
chili powder, garam masala (kichen king masala) and garlic paste.
• Mix everything well together.
• Cover and cook until tomatoes become soft.
• Open the lid and mix the masala.
• Add the cooked dal and water to adjust the consistency. Mix well.
• Add salt to taste and kasuri methi. Mix well.
• Boil for about 5-7 minutes. Dal fry is already.
• For making dal tadka, heat up ghee in a tadka pan. You can use
oil instead of ghee.
• Add minced garlic and let it turn little golden.
• Add fried red chilies and fry it.
• Add this tadka on dal and mix well.
• Dal fry tadka is also already.
• This goes well with jeeraa rice.

Dhal. Made predominately from Lentils, this Indian staple dish is comforting, nutritious and appetising. In my version, the oil and spices are added at the beginning rather than the end as a Tarka/Tadka, making it a little simpler to prepare.
This Dhal can be used as an ingredient in curries, Dhansak being the most notable one. Note that this recipe does not use Mix Powder or Base Gravy, so no further pre-preparation is required. Thank you to 'Westy' for providing inspiration for this recipe.

Gujarati Dal - Quick Easy To Make Indian Maincourse Recipe By Ruchi Bharani
Indian meals are incomplete without dal. It makes a perfect combination with both, rice and roti. Check out chef Ruchi Bharani's take on the popular Gujarati Dal.
Ingredients:
1 cup turdal (soaked for ½ hrs.)
1 tbsp. oil
1 small tomato (finely chopped)
coriander leaves
1/4 tsp haldi
1/2 tsp. red chilli powder
jaggery to taste
3/4 tsp. dhana jeera powder
lemon juice to taste
salt to taste
For Seasoning
Mustard seeds, jeera, hing, curry leaves, 1/2 dry red chilli, 4-5 cocum
Method:
- Pressure cook the dal with water for around 4-5 whistles and then churn it using a hand blender.
- Heat the ghee / oil and add the mustard seeds, cumin seeds, cinnamon pieces and cloves. Once the mustard seeds starts spluttering, break in the dry red chili, curry leaves, asafoetida and chopped tomatoes and stir everything well.
- Cook it for a few seconds and then add the churned dal and water.
- Add salt, turmeric powder, coriander and cumin seed powder, red chilli powder, cocum and give it a good mix.
- Add the jaggery and coriander leaves and then let the dal boil for about 8-10 minutes on a low flame.
- Once the dal is cooked, turn off the flame and serve it with rice or rotis.
