I saw this awesome share on Facebook by Rawfood Rehab and it looked so good I had to make it myself. I love cheese cake in the raw but the nuts are just too bloating. This is tasty, non-bloating, and sure to be a hit with all your friends... I recommend it!
Here is the Ingredients for a 9 spring-form pan
Crust Ingredients:
3 C organic coconut, unsweetened, shredded
8 moist medjool dates, pitted
3 Tbsp coconut oil
1/2 C flax meal, (ground flax seeds)
1/4 C raw cacao powder
2 tsp sea salt
3 Tbsp raw agave nectar
2 Tbsp water
Filling:
2 C dried apricots
2 C hot water (soaking water for apricots)
2 C young Thai coconut meat
1/2 C raw agave nectar
3 Tbsp lemon juice
1/4 tsp sea salt
1 1/4 C raw coconut oil, warmed to liquid
3 Tbsp lecithin powder
5 Tbsp cacao powder
1 Tbsp vanilla

Pumpkin Cheesecake Recipe➡️
This is not my original recipe! The original recipe is from mybakingaddiction.com, just look up pumpkin cheesecake on their website and scroll down! They have further instructions if you need more info!
Ingredients
2 cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1/4 cup granulated sugar
1 teaspoon pumpkin pie spice
48-ounce packages cream cheese, softened
1 cup granulated sugar
1/4 cup packed light brown sugar
3 large eggs
1 can (15 oz.) pure pumpkin puree
1/3 cup heavy cream
2 teaspoons pure vanilla extract
1 tablespoon pumpkin pie spice
Directions
1. Preheat oven to 350°F. Line the bottom of a 9-inch springform pan with foil and spray lightly with nonstick cooking spray.
2. In a medium bowl, combine graha cracker crumbs, butter, granulated sugar and pumpkin pie spice. Press onto bottom and 1 inch up side of prepared pan. Bake for 7 to 8 minutes. Cool on wire rack for about 10 minutes.
3. Begin to boil a large pot of water for the water bath.
4. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, combine cream cheese, granulated sugar and brown sugar until fluffy; about 3 minutes. Add in eggs, pumpkin and heavy cream, mix until fully incorporated; scraping down the sides of the bowl
5. Finally, add in vanilla and pumpkin pie spice and mix until well combined.
6. Pour batter into prepared crust. Place pan into a larger pan and pour boiling water into the larger pan until halfway up the side of the cheesecake pan.
7. Bake 60 minutes, the edges will appear to be set, but the center will still have some jiggle to it. At this point, crack the oven door, turn the heat off, and let rest in the cooling oven for one hour. After one hour has passed, carefully remove the cheesecake from the water bath and place on a cooling rack to cool completely. Once the cake is completely cooled, place it into the refrigerator for at least 6 hours.
(Don’t take out of spring form pan until completely cooled in the fridge then carefully place it on your serving dish)

Ingredients:
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
4 (8 oz) packages cream cheese, softened
1 1/4 cups granulated sugar
4 large eggs
1/3 cup lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1/2 cup sour cream
1/4 cup all-purpose flour
Instructions:
Preheat your oven to 325°F (165°C).
In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed.
Press the mixture into the bottom of a 9-inch springform pan.
Bake the crust for 10 minutes, then remove it from the oven and set it aside to cool.
In a large mixing bowl, beat the cream cheese until smooth.
Gradually add the sugar and continue to beat until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the lemon juice, lemon zest, and vanilla extract.
Add the sour cream and flour, and mix until just combined.
Pour the cheesecake batter into the prepared crust.
Bake for 50-60 minutes, or until the edges are set and the center is just slightly jiggly.
Remove the cheesecake from the oven and let it cool to room temperature.
Refrigerate the cheesecake for at least 2 hours, or overnight.
Once chilled, carefully remove the sides of the springform pan.
Serve and enjoy your delicious lemon cheesecake deluxe!
Optional: Top with whipped cream and additional lemon zest before serving
