2 INGREDIENT CHOCOLATE MACAROONS
- 100g desiccated coconut
- 100g dark chocolate 70% or above
- An optional pinch of salt
Break up the dark chocolate into a heat-proof bowl.
Melt in the microwave, making sure you check on it every few seconds so it doesn't burn. Or you can use the double boiler/bain-marie method.
Fold in the desiccated coconut until everything is combined.
Use a small ice cream scoop to scoop out even sized macaroons and place them on a board/sheet lined with baking paper.
Refrigerate until set. Or you can place them in the freezer if you can't wait to try them!

Filipino Recipe Coconut Macaroons with Flour
The Coconut Macaroons Filipino Recipe with flour is a favorite sweet dessert that looks like mini cupcakes but the taste and feel is like chewy-cakey-cookie that mainly uses nuts and related ingredients.
But in the Philippines, we use dessiccated coconut as the main ingredient and call the baked product as coconut macaroons.
Even though it is sweet, coconut macaroons will never bore your taste buds, possibly because of the coconut that has a unique taste.
Here is recipe that I truly learned from my Mom back home in the Philippines. I grow up with having these sweet goodies in our home almost everyday of my life!
I love enjoying coconut macaroons that's crispy on the outside but chewy and soft on the inside plus it has a milky-cakey taste.
That's why it's favorite dessert of Filipinos, young and old. And the good part is that coconut macaroons can be given as presents especially during Christmas season, it's natural to see homemade and commercialized coconut macaroons wrapped prettily and sold in stores. Having trouble deciding on a present, why not give coconut macaroons and make it yourself. The receiver will find it thoughtful of you.
Here's our ingredients!
4 Cups Dessicated Coconut
2 tbsp Vanilla Extract
1/2 cup flour
2 cups white sugar
1/2 cup melted butter
4 large eggs
1 can condensed milk

2 Ingredient No Bake Macadamia Nut Bites Recipe
Servings: 12 balls
INGREDIENTS
► 20-25 small pitted dates
► 1/2 cup macadamia nuts
INSTRUCTIONS
1. Remove the pits from the dates.
2. Add 20 small dates and 1/2 cup of macadamia nuts to the food processor.
3. Blend it up together until they are mixed throughly.
4. You will know they are done when they reach a texture that allows you to form them into balls.
5. Remove the mixture from the food processor, then place it in a mixing bowl.
6. Form the mixture into golf ball sized macadamia nut bites.
7. No baking required. It's ready to go.
8. Store the leftovers in the refrigerator.

Coconut Cacao Chip Macaroons Recipe
Servings: 20 macaroons
INGREDIENTS
► 2 cups shredded coconut (Unsweetened)
► 1/2 cup almond flour
► 1/4 cup cacao nibs
► dash Sea Salt
► 2 tsp vanilla extract
► 2 tbsp Coconut Oil (melted)
► 1/2 cup Maple syrup
► coconut oil spray
INSTRUCTIONS
1. Pre-heat the oven to 350F.
2. In a mixing bowl add 2 cups of unsweetened shredded coconut, 1/2 cup of almond flour, 1/4 cup cacao nibs, 2 tsp of vanilla extract, and 2 tbsp of melted coconut oil.
3. Mix it up to ensure all the ingredients are blended together.
4. Slowly add 1/2 cup of maple syrup to the mixture.
5. Mix it all together with your hands, then form into small macaroons.
6. Spray a baking dish with coconut oil spray.
7. Put the macaroons into the pre-heated 350F oven and bake for 15-18 minutes.

No Bake Chocolate Coconut Date Bites Recipe
Servings : 13 bites
INGREDIENTS
► 25 small pitted dates
► 1/2 cup shredded coconut (unsweetened)
► 1/4 cup almonds
► 2 tbsp cacao powder
► 1 tsp Coconut Oil
► dash Sea Salt
INSTRUCTIONS
1. In a food processor add 25 small pitted dates, 1/2 cup unsweetened shredded coconut, 1/4 cup almonds, 2 tbsp of cacao powder, 1 tsp coconut oil, and a dash of sea salt for taste.
2. Add the top to the food processor and mix it all together.
3. Once blended together, add the mixture to a mixing dish to form the chocolate coconut date bites.
4. Simply roll up the mixture in your hand to form it together to make the golf ball sized chocolate coconut date bite.

These are such a nice treat that look good, but taste even better.

Chocolate Raspberry Macarons
1 2/3 cup icing sugar, sifted
1 cup almond flour, sifted
3 egg whites,
1 pinch cream of tartar
1/4 cup sugar
1 tsp vanilla extract
red/pink food colouring (optional)
Filling:
4oz bittersweet chocolate, finely chopped
1/2 cup whipping cream
1/2 tsp raspberry extract
2 tsp butter, at room temperature
raspberry extract to taste
In a large bowl, sift together icing sugar and almond flour. Set aside.
With an electric mixer, whip egg whites and cream of tartar.
Slowly sprinkle in granulated sugar.
Add vanilla and desired amount of food colouring.
Beat until stiff peaks form.
Gently fold almond mixture into the egg whites. Do not overmix.
Pipe 1 inch circles of mix onto a parchment lined baking sheet, about 1 inch apart. Let macarons stand for 20-30 mins before baking to form a skin.
While waiting, preheat oven to 325ºF.
Once rested, bake at 325ºF for 10-12 minutes.
After 10-12 minutes, turn the oven off and allow macarons to cool. Do not open the door.
To make ganache heat cream in a small saucepan over medium-low heat. Remove from heat before it starts to simmer.
In a medium sized bowl, pour cream directly over finely chopped chocolate and allow to sit for 5 minutes.
With a rubber spatula, stir mixture gently until chocolate ganache is smooth.
Add room temperature butter butter and stir until melted. Do not overmix.
Set aside and allow to firm up until it can be easily spread with a spatula or piped into macarons.
To assemble, sandwich two macarons together with chocolate ganache.
Enjoy!
French Onion Stuffed Mushrooms
1 tbsp butter
1 large onion, thinly sliced
1/4 cup beef broth
1/2 tsp garlic, minced
1 tsp fresh thyme leaves
2 splashes Worcestershire sauce
12 whole button mushrooms, stems removed
1/4 cup Gruyere cheese, grated
salt and pepper to taste

parsley for garnish
In an medium sized pan, melt butter and add onions. Cook over medium heat, stirring occasionally until onions have softened and caramelized. Add broth, garlic, thyme leaves and Worcestershire sauce. Cook for another 2-3 minutes, or until liquid has mostly evaporated. Remove from pan and set aside.
In the same pan, add oil and whole mushrooms. Cook for 3-4 minutes over medium high heat. Remove from heat and transfer mushrooms into an oven safe baking dish, stem side facing up.
Stuff mushrooms with onion mixture and top with Gruyere cheese.
Bake at 350ºF for 10-12 minutes or until mushrooms are cooked through and cheese is melted and bubbly.
Garnish with chopped parsley and enjoy!
Slow Roasted Beef Tenderloin
1 beef tenderloin, 2-3lbs, trimmed and tied with string
1/2 cup beef broth
3-4 rosemary sprigs
4 garlic cloves, sliced
salt and pepper to taste
oil
Season beef with salt and pepper to taste.
In an oven safe pan over high heat, add oil and sear beef on all sides.
Deglaze the pan by adding beef broth.
Pour over beef and add garlic slices and rosemary to the baking dish.
Bake at 325ºF for 45-50 minutes, or until beef is cooked to your liking (125-130ºF for medium rare).
Once beef is cooked, remove from heat and tent with tinfoil. Allow to rest for 10 minutes.
Sliced to desired thickness and enjoy!
