How To make Danish Pancakes 2
1 c All-purpose biscuit mix
1 Egg, slightly beaten
3/4 c Beer
1/3 c Milk
Jam, jelly or preserves Sifted confectioners sugar
Traditionally a dessert, these delicious filled pancakes may also be served at brunch. Combine biscuit mix, egg, beer, and milk, stirring just until blended. Batter will be slightly lumpy. Using about 1 TBS batter per pancake, cook on a very lightly greased griddle or skillet until lightly browned, turning once. Spread with jam and roll up. Sprinkle with confectioners sugar. Serve warm. Makes 20 small pancakes, about 4-6 servings.

Æbleskiver is a traditional Danish snack which I liked the most when I was in Denmark. Most often it is served during Christmas Season. It is puffy, light and has a unique taste. Usually it is eaten with icing sugar and Strawberry jam.
We can prepare a batch of Æbleskiver and can freeze in zip lock covers. Whenever kids are asking for some snack, you can microwave it and serve with icing sugar. It is really delicious. Ingredients:
Apple -1 Nos
All purpose flour- 250g
Eggs -3
Zest of 1 Lemon
Cream-100ml (1dl)
Leban (butter milk)-300ml (3 dl)
Baking powder-1/2 Tsp
Baking Soda-1/2 Tsp
Butter -50g (melted)
Sugar -150g
Vanilla essence- 2 Tsp

How to Make Traditional Old Fashion Danish Pancakes (pandekage) From Scratch
Danish pancakes is a special treat and it is served as a dessert. The Danish pancake (pandekage) seems to be a little sweeter than crepes.
Most of the ingredients you probably already have in your kitchen. It does take a little time because you want to make at least two large pancakes for each person to enjoy. The pancakes are made one at a time in a large skillet similar to making crepes.
Below is the Danish Pancake Recipe. Here we explain how to Make Traditional Old Fashion Danish Pancake From Scratch.
Ingredients:
•1 cup of all-purpose flour
•2 teaspoons of sugar
•a pinch of salt
•2 eggs
•2 cups of milk
•European butter for frying
•grated lemon peel
•optional filling for the pancakes such as sugar, fresh fruit, or preserves
Directions:
1. Add all ingredients (except butter) into the bowl. Mix well until all clumps are gone.
2. Let the batter sit in a large measuring cup for 20 to 30 minutes.
3.Now you are ready to start frying pancakes! Add a bit of butter to a non-stick skillet and heat until medium warm.
4. Tilt the pan approx 90 degrees and pour batter from the top. The batter will, run down and fill the pan from rim to rim. You can also pour the batter in the middle of the pan and quickly make circling motions to distribute the batter all over the pan. The goal is to have as thin a batter layer as possible.
5. Cook until the pancake is a bit stiff. Before you flip the pancake be sure the pancake is firm on the edges.
6.When ready flip over the pancake. You will see it is nice and golden brown. Cook the other side for another 1 minute. The pancake should be light brown on both sides.
7. When ready, remove the Danish pancake from the frying pan.
8.Repeat the steps until you have used up all of the batter.
We usually make a large stack of pancakes on a large plate and pass it around for everyone to enjoy. The traditional way is to eat Danish pancakes is to drizzle sugar or marmalade in the center of the pancake. Then roll up the pancake into a roll.
This delicious dessert will impress your family and friends for sure. Your guests will be buzzing in anticipation to have the Danish pancake for dessert.
