Shack Burger and Crinkle Cut Fries
200 gr. (0,4 lb.) coarse ground beef, preferably rib or plate
4 slices American cheese
1 tomato
2 lettuce leaves
2 burger buns (or potato buns)
2 large potatoes (0,5 kg/1,1 lbs)
1 tablespoon butter
Sea or rock salt
Blackpepper
Shack Sauce
2 tablespoons mayonnaise
½ teaspoon mustard
3 cloves of garlic
½ teaspoon hot paprika
2 tablespoons pickle juice
3 pinches of garlic powder
2 pinches of granulated sugar
- Add sunflower oil in a pot and turn on the heat for fries. Put your iron cast on medium heat for your burger patties.
- Peel 2 large potatoes and slice them to your desire. If you use a crinkle cutter your fries will look the same as Shake Shack’s. If you don’t have one, you can slice them and make regular fries.
- When the oil is hot enough, place the potatoes in the pot. In order to see if the oil is ready, put a wooden spoon or knife in to the pot. When you see bubbles coming out of the wood, it is ready to add the potatoes.
- While potatoes are frying you are ready to make shack sauce. In a bowl put 2 tablespoons of mayonnaise, 1/2 teaspoon of mustard, ½ teaspoon of hot paprika, 2 tablespoons of pickle juice, 3 pinches of garlic powder and 2 pinches of granulated sugar. Crush 3 garlic cloves and add them into the bowl. Mix them well, and your shack sauce is ready.
- For the patties, you need fatty and single grinded ground beef. Ribs or plate will be perfect. Ask your butcher to give you especially fatty parts. Make sure the meat is coarse enough after the grind to see the meat and fat chunks. This is especially important to have a juicier therefore tastier patty.
-Divide your meat into 2 balls. First, sprinkle salt and pepper on your cast iron, then place your meatballs on it.
- Then grab a metal spatula flatten the balls. Pressing on the spatula with a spoon’s handle as leverage will help flatten the patty. You can also use a smaller pan’s bottom to same effect.
- You need to keep cooking until the bottom of the patties turns a bit crisp. It is going to take a couple of minutes. Sprinkle some more salt and pepper on patties and flip.
-Place 2 slices of American cheese for each patty and cover them with metal bowl to melt cheese quicker.
-While patties are getting cooked, cut your burger buns in half. Add 1 tablespoon of butter to the pan and roast your bread.
- When your buns absorb all the buttery and meaty flavors, take them out from the pan. Spread sauce on the bottom halves.
-Place your patties onto buns and put 1 leave of lettuce for each burger.
-Thinly slice 1 tomato and place 2 slices on each burger. Spread more sauce on the top halves of the buns and put them over your patties.
- Fries will be ready when they are golden. Remove them from the fryer and drain them on a few sheets of paper towel. Try not to crowd them on the towel otherwise they will get soft. Add salt to taste while they are hot.
-Your faster, cheaper and more delicious shack sauce, shack burgers and crinkle cut fries are ready in 20 minutes.
