How To make Cranberry Shrub
1 qt Cranberry juice
2 c Sugar
1 Lemon rind,
2/3 c Lemon juice
1 qt Club soda
1 pt Tart sherbet;(opt)
Simmer cranberry juice, sugar and rind, uncovered, in a saucepan (NOT aluminum) 10 minutes, stirring now and then. Off heat, mix in lemon juice; cool, pour into a bottle, cover and refrigerate. Serve as is on the rocks in punch cups or small glasses. OR, half fill a tall glass with shrub, add ice, and fill with club soda. OR, pour into punch cups and top each serving with a scoop of tart sherbet. From: Terri St.Louis

Cranberry Cocktail | Prosecco Shrub
*Makes 2C of Shrub, but this is highly concentrated, to be used like a simple syrup.
You’ll Need:
12 oz cranberries
1C sugar
3/4C apple cider vinegar
1 Lime, zested and juiced
Icy cold Prosecco or if you’re doing this as non alcoholic...just use some sparkling water!
Mix cranberries, sugar, apple cider vinegar and lime in a pan on medium high. Cook until the cranberries pop. Simmer for 10 mins. Strain.
Pour about 1/4C into a glass, top with your Prosecco or Sparkling Water. Garnish with lime.

The word shrub can also refer to a cocktail or soft drink that was popular during America's colonial era, made by mixing a vinegared syrup with spirits, water, or carbonated water. The term shrub can also be applied to the sweetened vinegar-based syrup from which the cocktail is made; the syrup is also known as drinking vinegar.
Drinking vinegar is often infused with fruit juice, herbs and spices for use in mixed drinks
The American version of the shrub has its origins in 17th century England where vinegar was used as an alternative to citrus juices in the preservation of berries and other fruits for the off-season.Fruit preserves made in this fashion were themselves known as shrubs and the practice carried over to colonial America.
By the 19th century, typical American recipes for shrubs used vinegar poured over fruit—traditionally berries—which was left to infuse anywhere from overnight up to several days; afterwards, the fruit would be strained out and the remaining liquid would be mixed with a sweetener such as sugar or honey and then reduced to make a syrup.
