Creekstone Cookout Episode 18 - Over The Top Chili
INGREDIENTS
¼ cup oil, 1 large yellow onion (chopped)
1 large green pepper (seeded and chopped)
4 cloves garlic (crushed)
2 jalapenos (finely chopped)
28oz can diced tomatoes
1 quart beef broth
1 cup Big Green Egg BBQ sauce
1/3 cup chili powder
2 tablespoons cumin
1 tablespoon brown sugar
1 teaspoon cayenne
3 pounds ground beef formed into a large patty

2 – 15oz cans of dark kidney beans, drained

INSTRUCTIONS
1. Set the egg for direct cooking at 350 degrees
2. Add the Big Green Egg dutch oven (uncovered) to the grid. Add the oil, then add the onion and green pepper, and cook until soft. Add the garlic and jalapenos and cook a few more minutes.
3. Add the tomatoes, broth, Big Green Egg Sweet Vidalia Onion Siracha BBQ sauce, chili powder, cumin, brown sugar, and pepper. Mix well and bring to a simmer
4. Remove the dutch oven and cooking grid and then add a couple small chunks of smoking wood.
5. Add the Eggspander with a conveggtor for indirect tiered cooking. Place the Dutch Oven on the bottom grid and continue cooking
6. Season the RC Ranch Wagyu beef with Meat Church Holy Voodoo and form the meat patty.
7. Place patty on the top sliding grid centered over the Dutch oven so that the meat drips into the chili.
8. Cook for 1 ½ hours, adjusting the heat to maintain a simmer.
9. Remove the meat. Add the beans to the chili and add more water if needed (we didn’t). Break up the meat with tongs and place it in the dutch oven.
10. Cook for another 30 minutes until everything is well blended and slightly thickened

Chili Recipe
1.3 lb ground beef
1/2 large onion finely minced
1/2 sazon packet
1 tbsp worstichire sauce
1 tbsp chilli powder
1/2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp pepper
1 tsp brown sugar
1/2 - 1 tbsp mustard
3-4 tbsp ketchup
6 oz salt free tomato sauce
1 tbsp beef bouillon
1 1/2 cup water ( it will reduce as the chili cooks)
*Always season to taste especially when it comes to seasoning that have salt.
Hot dogs
cheese
BBQ Chicken
3 lb chicken legs
1 tsp pepper, garlic powder, chili powder, beef bouillon, onion powder, salt free cajun seasoning
salt to taste
approximately 3/4 cup bbq sauce of choice
olive oil
Pasta Salad
8 oz pasta cooked according to package directions
chicken bouillon
1/2 tbsp ranch dry seasoning
1/2 tbsp italian dressing dry seasoning
1/2 - 1 tbsp salad supreme
1/2 cup sour cream
2-3 tbsp avocado oil mayo
2 tbsp olive oil
1 cucumber, diced and deseeded
cherry tomatoes
8 oz mozzarella cheese, diced
1/2 cup sweet corn
basil and/ or parsley
* No salt will be needed. Add more of the dry seasoning if needed after mixing everything together. Always season to taste, but keep in mind that the dry seasoning has salt. Use any add in you wish, I did not use meat b/c the rest of the meal was meat heavy. Olives, red onions, and other veggies would be nice in the pasta salad as well.

They're cheap, tasty and usually, pretty solid crowd pleasers, unless your crowd is made up of all food critics. Hot dogs are relatively easy to make, too, right? Frank Proto, Director of Culinary Operations at the Institute of Culinary Education, explained that while hot dogs are indeed a no-brainer, you can do a little more to make them even better.
