Taiwanese Basil Chicken with CookingAndCrafting

This is a delicious dish with an almost stir-fry feel to it, though it takes a little longer to cook. The time works to help the flavors marinate into the chicken. YUM!!
Mother found this recipe in her Ladies' Home Journal, September 2013. It comes from a blog: Tiny Urban Kitchen
1 Tbsp sesame oil (I mistakenly said teaspoon)
10 crushed garlic cloves
1/4 c. thinly sliced fresh ginger
3 scallions, cut into 1-inch pieces
1 lb. boneless chicken thighs, cut into bite sized pieces
1/4 c. mirin
1/4 c. low sodium soy sauce
2 Tbsp. sugar
1 Tbsp. sesame oil
1 c. basil leaves
Heat 1 Tbsp. sesame oil over medium high heat. Add garlic, ginger and scallions. Cook 2 minutes. Add chicken, mirin, soy sauce, sugar and the other tbsp of sesame oil. Bring to a boil and simmer until chicken is cooked and liquid is almost gone, about 15 minutes. Stir in basil leaves and serve over rice.
