How To make Cinnamon Raisin Breakfast Biscuits
8 oz Firm silken tofu
1/4 c Apple juice
1 c Wholewheat flour
1 c All-purpose flour
2 ts Baking powder
1/2 ts Baking soda
1 ts Cinnamon
1/4 ts Salt, optional
1/2 c Walnuts, chopped
1/2 c Raisins
1/4 c Maple syrup, optional
Preheat oven to 450F. Oil baking sheets. Blend tofu until smooth. Blend in apple juice & 3 tb maple syrup. Transfer to a mixing bowl & set aside. Sift together the next 6 ingredients. Fold into the tofu mixture. Gently stir in the walnuts & raisins. Turn dough onto a lightly floured board & form into a ball. Roll out dough to a 1/2" thickness. Cut with a cookie cutter. Using a pastry brush, glaze with the remaining syrup if you wish. Bake for 12 minutes. Serve immediately.

Homemade Cinnamon Raisin Biscuits!!
Here is a wonderful recipe for homemade cinnamon raisin biscuits! These little morsels of deliciousness have the perfect combination of cinnamon, raisins and brown sugar all topped with a sweet vanilla icing. Pure deliciousness!!
What you'll need:
2 cups all-purpose or plain flour
1/2 cup granulated sugar
4 tsp baking powder
1/2 tsp salt
1/4 cup shortening
1/2 cup raisins
3/4 cup buttermilk (or 3/4 cup milk with 2 1/4 tsp white vinegar)
3 Tbsp brown sugar
1 tsp cinnamon
In a small bowl, combine brown sugar and cinnamon and set aside. In a large bowl, combine flour, white sugar, baking powder and salt. Cut in shortening until mixture resembles fine crumbs. Stir in raisins to coat and then mix in buttermilk. Mix just until dry ingredients are wet. Do not over mix.
Pat out on a lightly floured surface to about 1/2 thick. Sprinkle brown sugar and cinnamon mix over half of the dough. Fold the other half of the dough over top and again pat out to 1/2 thick. Fold dough in half again and pat out to 1 thick. Cut out biscuits using a biscuit cutter and place 2-3 apart on a cookie sheet lined with a silicone baking mat or parchment paper to prevent over browning on the bottoms. Bake in a preheated 400*F oven for 12-14 minutes or until golden brown.
For the icing:
1 cup powdered sugar
1/4 tsp vanilla extract
1.5 Tbsp milk
Combine well in a small bowl.
Drizzle over still warm biscuits. Serve and enjoy! Makes 12 biscuits. Enjoy!

Basic Biscuit Ingredients
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter cubed
- 2 cups cold milk
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1 cup raisins
Optional Glaze
- 2 - 3 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1 - 2 tablespoons milk
- Combine and whisk all basic biscuit ingredients in a large bowl except for butter and milk.
- Add butter and press into flour with pastry cutter or fork
- Add cold milk
- Mix until combined
- Flour surface or cutting board and rolling pin
- Add dough and press into circular shape
- Roll dough until 1/4 inch thickness
- Cut out biscuits
- Place on prepared baking sheet
- Bake in preheated 400°F oven for 15 - 17 minutes or until Golden brown
- Remove from oven
- Add optional glaze if you like
- Plate and enjoy!
