Best Carrot Cake Cheesecake - Cheesecake Recipe
Carrot Cake Ingredients:
3 Eggs
1/2 cup Dark Brown Sugar
1 tbsp of Honey
1 tsp of Cinnamon
1 tsp Vanilla Extract
1 tbsp Vanilla Bean
1/3 cup Olive oil
1/2 tsp Baking Powder
1/2 tsp Baking Soda
Salt
3/4 cup Whole Wheat Flour
1/4 cup All Purpose Flour
1 cup grated Carrots
1/2 cup Walnuts
8 oz Drained Pineapple
Lime Zest (Garnish)
Squeezed Lemon (Optional)
Cheesecake Ingredients:
3/4 cup sugar
2 pkgs Cream Cheese
3 eggs
2 tsp Vanilla Extract
1 tbsp Flour
Directions:
-Preheat oven to 350 degrees.
-Grease 9-or 9 1/2-inch Springform Pan
Carrot Cake:
-Combine oil, brown sugar, and 2 eggs; mix thoroughly. Add vanilla bean, vanilla extract, honey, and cinnamon. Mix again.
-Stir in flour, baking soda, baking powder, and dash salt. Then, stir in drained pineapple, carrots, and walnuts.
Cheesecake:
-Beat 2 pkgs cream cheese, sugar, flour, 3 eggs, and vanilla extract until smooth.
Baking Directions:
-Spread 2 cups of carrot cake batter over bottom of greased 9-or 9 1/2-inch Springform Pan.
-Drop cheese batter over carrot cake batter spreading evenly; top with spoonfuls of remaining carrot cake batter. *Note: There may be carrot cake batter left over; you can use the extra batter to make some cupcakes!
-Bake in preheated 350 degree oven for 50 to 60 minutes or until cake is set and cooked thoroughly. Cool to room temperature, then refrigerate.
*Prepare Pineapple Cream Cheese Frosting:
In a bowl, combine 2 oz cream cheese, 1 tbsp butter, 1-3/4 of powdered sugar, 1/2 tsp of vanilla, 1/3 cup of reserved pineapple juice, and dash of salt. Beat until smooth and of spreading consistency. Frost top of cheesecake. Refrigerate 3 to 4 hours before serving.
